Wheat Garden Salad (Tabbouleh)

Ingredientes

  • 1 c. cracked wheat, fine - bulgur
  • 1 bunch green onions
  • 2 lg. bunches parsley
  • 1/2 bunch mint leaves
  • 4 pound tomatoes
  • Juice of 4 lemons
  • 1/2 c. olive or possibly corn oil
  • Salt and pepper to taste

Direcciones

  1. Soak wheat in water a few min. Squeeze dry by pressing between palms. Chop onions, mint leaves, parsley, and tomatoes very fine. Add in wheat, lemon juice, extra virgin olive oil, salt and pepper to minced items. Mix well.
  2. Serve with fresh lettuce leaves, grape leaves or possibly cabbage leaves used as scoops. Serves 6.
