Receta White Cheddar Mashed Potatoes, Puro Coffee

One side dish that is traditional on many holiday tables is mashed potatoes.

Of course, there are many opinions on what makes the best mashed potatoes.

Some like them whipped, perfectly smooth and creamy.

Some like them roughly mashed with a few chunks left.

Some like them plain – potatoes, butter and milk only.

Some like to add flavors – roasted garlic, crisp bacon, hot peppers.

The white cheddar adds flavors without changing the color; the bright green parsley adds a festive color.

White Cheddar Mashed Potatoes

Total time: 30 minutes

Ingredients:

Instructions:

Peel potatoes and cut into large chunks. Put potatoes in medium saucepan and add just enough water to cover.

Add salt and cover with a lid. Bring to a boil over medium heat.

When boiling reduce heat and take cover partially off. Continue cooking until done, 15 – 20 minutes. They should be very done, easily coming apart when poked with a fork.

When done, drain and put back on the heat 10 seconds or so to evaporate any excess moisture.

To finish:

Mash potatoes with a potato masher (or fork if you don’t have one).

Add butter and enough of the milk to get your desired consistency.

Add half the cheddar and stir well.

Add the remaining cheddar, parsley and stir lightly.

We live on a narrow lane that goes past our house and ends at our neighbor’s house. Unless you come into our driveway or go into our neighbor’s driveway, there is no place to turn a car around. And using our driveway is a three-point turn, minimum.

If you happen to be driving a truck the choices are significantly reduced… Usually they just have to back up.

Today, the driver slightly misjudged as he went around the corner and the right wheel went into the drainage ditch.

Without going into details, suffice it to say that it was going to take a lot of power to get the truck back on the road.

We felt bad, but there was nothing we could do to help.

On the other hand, Puro Coffee has found a way to help a lot of people – specifically, coffee growers.

They were kind enough to send me some samples..

A lot of samples, actually.

A lot of very delicious samples.

The package they sent was filled with handwritten notes about the coffees and the company (Very kind… many, many thanks, Tamara!).

I won’t give you all the details about the coffee…. You can find all that on their site (which is a really fun site, I might add).

But a few highlights….

Puro Fairtrade Coffee is a brand from a company called Miko who has been roasting coffee in Belgium for 212 years now. It was created in 2005.

Miko has 9000m2 of solar panels on the roof of their building to generate their own electricity.

Puro works with the World Land Trust to protect and conserve rain forests.

In 2007 while some of the Puro Fairtrade Coffee team were trekking through the Puro Ecuadorian Rainforest Reserve, some new species of orchid were discovered. This orchid was later named after them.

They work with the Fairtrade Foundation to help small growers maintain and improve their farms.

They have all sorts of great tips for what to do with ‘recycled’ coffee – as in coffee grounds. My favorite, and one I’ll be doing in the spring, is that coffee grounds can deter both snails and ants…. My two biggest gardens pests!

I love the coffee. The first one I tried was the Fuerte…. It’s one I’ll be starting my mornings with from now on. The other two, the Organic and Noble are equally good.

The hot chocolate is fantastic – I’m not sharing that with mon mari.….

Bonnie just caught her first mouse. Didn’t know she could move that fast.

Didn’t know that mice squealed, either.

Sigh…..

Oh…. A big tow eventually came to the rescue of the driver in our ditch.

I think I’ll have another cup of coffee…..
