Receta White Chocolate Lime Scones

It's the very first Monday of 2011. Christmas break is officially over. The boys are back in school. Well except the oldest. He and I are still recovering from a nasty head/chest cold thing. Great way to start the year off, ay? January is always a hard month for me. The excitement of the holidays is over. We don't have any birthdays to celebrate. We seem to be sick a lot in January (got that one off to a great start already).

And the biggest reason I don't like January? The weather. After two months of snow, I'm ready for sunshine. But alas, January is usually the worst winter month here in Utah. Lots of snow. Lots of cloudy days. I hate cloudy days. I can handle just about anything as long as the sun is shining. I love me some sun!

And January is almost always bitter cold. This one has sure started out that way. When it's freezing cold outside, I tend to do more baking. So a lot of baking got done around here over Christmas break. Nothing warms the house, and the tummy, quite like home baked bread, muffins, scones, and other goodies!

I came up with this scone recipe because I found some limes in the fridge that I needed to use up. I love the combination of the tart lime with the sweetness of the white chocolate. They are actually quite tart, so if you prefer less lime, you can replace the lime juice with milk. I thought they were perfect, but I love lime.

White Chocolate Lime Scones

Cut butter into dry ingredients till coarse crumbs form. Stir in chocolate chips. Add lime juice, milk, and zest and mix just till moistened. Pat or roll 3/4" thick. Cut into circles and place on cookie sheets. Brush with milk. Bake at 400 for 12-15 minutes. If desired, drizzle with melted white chocolate.

Notes:

-If you prefer, you can sprinkle the scones with sugar after you brush them with milk. I opted not to because I knew I would be drizzling them with white chocolate.
