.%20%20An%20empty%20spot%20sat%20in%20my%20heart%20for%20those%20two%20long%20nights,%20and%20I%20was%20fairly%20certain%20that%20he%20was%20homesick.%20%20And%20he%20was...%20his%20experience%20was%20anything%20but%20%22fun%22%20and%20he%20was%20extraordinarily%20happy%20to%20be%20home.%20%20He%20did%20however,%20talk%20about%20many%20of%20his%20activities%20and%20adventures%20for%20hours%20end,%20leading%20me%20to%20believe%20that%20it%20was%20not%20all%20bad!%3C/p%3E%3Cp%3ELiv%20was%20away%20at%20camp%20last%20week%20and%20had%20a%20wholly%20different%20experience.%20%20As%20she%20does%20every%20day,%20she%20%22Lived%20Life%22%20at%20camp.%20%20Not%20only%20did%20she%20have%20no%20reservations%20about%20attending%20the%20camp%20and%20being%20away%20from%20home%20for%20the%20now%204%20night/5%20day%20camp,%20but%20she%20literally%20counted%20the%20days%20until%20she%20left.%20%20She%20has%20never%20been%20away%20from%20home%20for%20more%20than%20one%20night%20and%20while%20she%20did%20show%20a%20slight%20reservation%20about%20the%20length%20of%20time,%20she%20popped%20out%20of%20the%20car%20the%20morning%20of%20and%20was%20off%20in%20a%20flash.%3C/p%3E%3Cp%3ESomehow%20seeing%20her%20leave%20so%20happy%20made%20it%20easier%20for%20me...%20for%20the%20first%203%20days%20anyway.%20%20Then%20I%20really,%20really%20started%20to%20miss%20her.%20%20The%20house%20was%20far%20quieter,%20albeit%20cleanier,%20my%20schedule%20opened%20up%20without%20all%20the%20dance%20driving%20requirements,%20and%20we%20were%20all%20a%20bit%20more%20sedate...%20boring%20even.%20%20Life%20was%20simply%20different%20and%20all%20of%20us%20noticed%20an%20emptiness%20and%20that%20it%20wasn't%20anywhere%20near%20as%20fun.%20%20Yes,%20something%20was%20surely%20missing.%3C/p%3E%3Cp%3ELiv%20had%20a%20wonderful%20week%20filled%20with%20night%20hikes,%20rock%20climbing,%20all%20day%20adventures%20and%20really,%20really%20bad%20food!%20%20Apparently%20the%20pancakes%20at%20breakfast%20were%20%22edible%22,%20but%20the%20scrambled%20eggs%20(which%20tasted%20%22powdery%22)%20were%20%22disgusting%22.%20%20The%20only%20good%20part%20about%20the%20Sloppy%20Joes%20was%20the%20bread,%20and%20the%20pizza%20had%20no%20taste.%20%20Even%20the%20ice%20cream%20was%20%22just%20ok%22.%20%20In%20essence,%20she%20said%20she%20lived%20on%20%22edible%20pancakes,%20odd%20tasting%20chocolate%20milk,%20salad%20and%20bread%22%20for%20most%20of%20the%20week.%3C/p%3E%3Cp%3EDefinitely%20needing%20to%20get%20some%20decent%20food%20into%20her%20we%20immediately%20got%20to%20making%20one%20of%20her%20favorite%20meals,%20pancakes!%20%20My%20mom-instincts%20kicked%20in%20and%20I%20felt%20a%20need%20to%20load%20the%20pancakes%20with%20healthy%20nutrients%20as%20we%20began%20filling%20the%20mixing%20bowls.%20%20Out%20of%20the%20pantry%20came%20a/p%20flour,%20whole%20wheat%20flour,%20wheat%20germ,%20flax%20meal,%20rolled%20oats%20and%20cinnamon%20all%20combined%20with%20a%20touch%20of%20brown%20sugar.%20%20Then%20we%20opened%20the%20fridge%20and%20pulled%20out%20fresh%20milk,%20eggs%20and%20buttermilk.%20%20Luckily%20we%20even%20had%20an%20over-ripe%20banana%20on%20the%20counter%20and%20we%20were%20set!%3C/p%3E%3Cp%3EHungry%20eyes%20watched%20eagerly%20as%20I%20mixed%20everything%20together%20and%20set%20the%20batter%20onto%20the%20griddle.%20%20All%20the%20while,%20my%20more%20grown%20up%20than%20ever%20girl%20chatted%20to%20me%20about%20her%20camp%20adventures,%20never%20once%20mentioning%20being%20homesick.%20%20As%20happy%20as%20I%20was%20that%20she%20had%20such%20a%20good%20time%20and%20that%20our%20girl%20is%20confident%20enough%20to%20go%20off%20on%20her%20own,%20I%20have%20to%20admit%20that%20my%20heart%20was%20just%20a%20touch%20sad%20that%20she%20didn't%20seem%20to%20have%20missed%20me%20at%20all!%3C/p%3E%3Cp%3EHer%20eyes%20lit%20up%20as%20I%20placed%20a%20plate%20filled%20with%20freshly%20cooked%20pancakes%20in%20front%20of%20her%20and%20then%20filled%20her%20favorite%20little%20pitcher%20with%20syrup.%20%20She%20hungrily%20attacked%20the%20plate%20of%20food%20and%20groaned%20with%20pleasure%20at%20the%20flavors%20and%20tastes%20proclaiming%20this%20the%20%22best%20meal%20in%20the%20world!%22.%20%20Going%20back%20for%20seconds,%20she%20finally%20began%20to%20relax%20and%20her%20eyes%20grew%20a%20bit%20heavy.%3C/p%3E%3Cp%3ETurning%20to%20get%20started%20on%20the%20dishes%20I%20suddenly%20felt%20something%20behind%20me%20and%20then%20felt%20my%20heart%20begin%20to%20melt%20as%20my%20little%20girl's%20arms%20wrapped%20around%20my%20waist.%20%20She%20rested%20her%20head%20on%20my%20chest%20and%20said%20those%20words%20that%20I%20had%20been%20feeling%20myslef,%20%22Mom,%20I%20love%20you%20so%20much!%20%20You%20can't%20believe%20how%20much%20I%20missed%20you!%22%20%20With%20tears%20in%20my%20eyes%20I%20admitted%20how%20lonely%20it%20had%20been%20without%20her%20and%20how%20much%20we%20had%20missed%20her%20too.%20%20Living%20Life%20to%20the%20fullest%20is%20a%20good%20thing...%20but%20it's%20always%20nice%20to%20come%20home!%20%20All%20is%20now%20right%20in%20my%20universe.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20combine%20the%20buttermilk,%20milk%20and%20oats.%20%20Allow%20to%20rest%20for%20about%2020%20minutes%20while%20you%20are%20gathering%20the%20other%20ingredients.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20the%20flours,%20wheat%20germ,%20flax%20meal,%20sugar,%20baking%20powder,%20baking%20soda,%20cinnamon%20and%20salt.%20%20Whisk%20to%20combine.%3C/p%3E%3Cp%3EPlace%20the%20eggs%20in%20a%20small%20bowl%20and%20beat%20lightly%20with%20a%20fork,%20then%20add%20to%20the%20buttermilk%20mixture.%20%20Mash%20the%20bananas%20and%20add%20them%20to%20the%20wet%20mixture,%20whisking%20well%20to%20combine.%3C/p%3E%3Cp%3EPour%20the%20wet%20mixture%20into%20the%20dry%20mixture%20and%20stir%20lightly%20with%20a%20wooden%20spoon%20just%20until%20combined,%20taking%20care%20not%20to%20over-mix.%3C/p%3E%3Cp%3ECook%20pancakes%20as%20you%20regularly%20do%20over%20medium%20heat...%20I%20use%20an%20electric%20nonstick%20griddle.%20%20I%20don't%20have%20to%20oil%20my%20griddle,%20but%20you%20may%20brush%20your%20pan%20or%20griddle%20with%20a%20little%20oil%20or%20a%20quick%20spray%20of%20cooking%20spray%20to%20help%20with%20sticking%20issues.%20%20Pour%20about%201/3%20cup%20of%20batter%20onto%20the%20griddle%20and%20cook%20until%20the%20edges%20look%20dry%20and%20bubbles%20begin%20to%20form%20on%20the%20top%20of%20the%20pancake.%20%20Flip%20and%20cook%20a%20minute%20or%20two%20more%20until%20the%20underside%20is%20browned.%20%20Serve%20immediately,%20or%20alternatively,%20place%20on%20an%20ovenproof%20plate%20in%20a%20200%C2%BA%20oven%20to%20keep%20warm%20until%20ready%20to%20serve.%20%20Top%20with%20maple%20syrup,%20butter%20or%20your%20favorite%20pancake%20topping!%3C/p%3E){kind=link}
