- Combine first 4 ingredients in a small bowl; stir well and set aside.
- Combine sugar and oil in a mixing bowl, beat at medium speed for 2 min or possibly till blended. Add in egg, beat till light. Add in flour mix and bananas. Stir in vanilla and minced walnuts.
- Pour batter into an 8x4x2 inch loaf pan coated with cooking spray; bake at 350 degrees for 45 min. Cold for 15 min. About 120 calories per 1/2 inch slice.
