Receta Whole Wheat Zucchini Bread

In my opinion, zucchini bread is one of the best tasting ways to use zucchini. Plus it’s an excellent way to use up those really big zucchinis that magically appear in the garden or at half price sale at a farm stand, like the one on the left. . .
I don’t use a lot of sugar in this recipe but it is sweet enough for me. If you like a sweeter taste, increase the amount by 1/4 cup and enjoy!
Whole Wheat Zucchini Bread
INGREDIENTS
- 1/2 cup coconut oil
- 1/2 cup coconut sugar
- 2 eggs
- 3/4 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups shredded zucchini
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 3/4 cup chopped pecans or walnuts
- 1/2 cup raisins (optional)
INSTRUCTIONS
Preheat oven to 375
Place the oil, sugar in a mixing bowl; using a mixer on medium combine
Add eggs and mix in well
At low speed, mix in the flour, baking soda, baking powder and salt
Add the zucchini, vanilla, cinnamon, nutmeg and stir until all are combines
Add the walnuts and raisins
Turn into a greased loaf pan and bake 40 to 45 minutes at 375
