Receta Wholewheat & Cornmeal Goji Berry Scones – A Healthy Treat

“Madam we have a few exciting and new organic products on shelf this month” greeted the man in the shop. “Thanks shall check it out” was my quick & meek reply to the much baffled salesman and he understood that I wanted to be left alone during one of my monthly visits to the health stores nearby.

Never did I know that I was in for a surprise, yes I spotted Goji Berries! I looked at the salesman who was probably a bit upset with my reply and smiled. Yes, I am holding one of the most nutritious and powerful super foods in the world – Goji Berries!

And from the day I got my hands on these wonder foods, I am on a ‘Goji spree’. It is as if I want to make up for all that I lost for so many years without these berries.

You will find Goji berries in my breakfast Oatmeal porridge & pancakes, and in a few special cakes, muffins and cookies I baked just for the sake of these berries. And yes, I added them to my Kadhi also, which eventually I enjoyed as I like my curries with a slight sweet sour taste but my hubby had to gulp it in the name of super food.

Ready to be baked..love those berries!

Method; Wash the Goji berries in running water and soak them in 1 tbsp. of milk for about 5 minutes. Soak the coarse cornmeal also in 2 tbsp. of thick curd for 15 minutes.

Cut a small lemon and squeeze to get a tsp. of juice, grate the peel for the zest. Add lemon zest, juice and honey into the soaked cornmeal.

Take a large vessel and add whole-wheat flour into it. Add baking powder, baking soda, salt and sugar in the flour and mix thoroughly. Add the melted butter or oil in the flour mix and start rubbing the butter and flour with your fingers till it resembles coarse meal.

Pour the cornmeal and yogurt in the flour mix. Mix all the ingredients well and add the Goji berries in it, reserves a few to garnish.

The resultant dough will be quite sticky to handle. Sprinkle a little flour on a flat surface and turn the dough on it. Give it a shape of a large circle of about 1 inch thick. Arrange the reserved Goji berries over the circle.

Keep the circle on a greased butter paper carefully. Use a knife to divide the circle into eight scones triangles. Brush all the scones with milk or buttermilk.

Hot from oven..

Bake the scones at 200°C for about 15-20 minutes till it becomes golden brown on top and soft from inside. Take out from the oven and cool it for 10 minutes. Serve the scones with butter or any fruit jam or preserve of your choice.

Aren’t these scone look beautiful! And with all the healthy ingredients in them they are one of my favorite bakes.

The Goji which were on top got burnt and I could not help it but feel sad for loosing a few of my precious berries

Love this wholewheat and corn scone..

I sprinkled a tsp. of crystal sugar on the top for much crunch and caramelized scone, wish my pantry had brown sugar for the same. Need to check my pantry before baking the next time.

Oh..I am in love with this slice of good health! And yes with loads of wonder foods such as honey, Goji, wholewheat, cornmeal, curd in it how can you go wrong.

Notes;

Replace the Goji berries any other dried fruits such as with raisins, blueberries, black currents, figs etc.

Use brown sugar in place of honey for a lovely color and flavor.

The cornmeal I used is slightly coarse and gives a crunchy texture to the scones, you may use the fine variety if you don’t like the crunch in it.

Refined flour will give fluffy scones, but I love these slightly dense wholewheat ones which are very filling as a breakfast and dinner meal as well.

Do not garnish the scone with the berries before baking (as I did in the picture), the burnt berries taste awful, and this is a lesson for me not to waste my precious Goji in my next bake.
