Receta Wholewheat Mini Pears Pie with Cinnamon and Palm Sugar
The unexpected guests who were allergic to cream, condensed milk & eggs, made me bake these mini pears pie, and I am delighted I did the same! Else dessert is normally a frosted cake or fresh fruits with cream. And this time I thought of making a pie with pears instead of the ubiquitous Apples and bake them in individual mini tarts. Quite easy to assemble, these Mini Pears Pie also give more crust to bite upon than the single crust pies.
The uneven look of the pie crust is due to the hard dough which almost crumbled when I lined the moulds. But then the result is a very delightful pie with a crisp base and a soft filling of red pear. Cinnamon and palm sugar combo give the extra flavors and healthy touch to this delicious pie .
Red pears & palm sugar
Ingredients;
(6 small pie crusts)
For the Crust;
- 1 cup wholewheat flour
- 2 tbsp All purpose flour
- A pinch of salt
- 2 tsp sugar (optional)
- 1/4 tsp. baking powder
- 2 tbsp. cold butter
3-4 ice cubes
For the Filling;
Crumble the flour with ice cubes
Method: Take a large vessel and pour the wholewheat flour and the all purpose flour into it. Add salt, sugar and the baking powder to it. Mix all the ingredients well using a fork. Add the butter and mix the flour using finger tips till the flour resembles bread crumbs. Add the ice cubes and gently rub in the flour till the crumbles make a hard dough. Do not overdo the rubbing part.
Cover the dough with a cling film and refrigerate for half an hour.
ready to go in the oven..
Take out the dough and roll it on a plain surface dusted with flour. The dough will be quite hard to roll out and break often. You can roll the dough and cut into 6 rounds or pinch 6 balls from the dough and then roll it in small circle. Grease the muffin mould and line each mould with these circles.
Adjust the shapes of the pie and fill all the cracks by pinching the dough together, the crust will come out as a perfect pie when baked.
Filling: Preheat the oven to 190°C for 10 minutes. Peel and chop the Pear into small pieces. Take another vessel and add the chopped pears, palm sugar, wholewheat flour and the cinnamon into it. Mix all the ingredients well.
The uneven pies with healthy filling..
Fill the above filling in each pie crust. Bake the Pears pie at 190°C for 30-40 minutes or till the base is slightly brown in color. Serve the Pears pie with fresh cream or dusted powder sugar.
Crispy base..
Though the shapes of the crust is uneven they are extremely crisp and gave a much needed crunchy bite for the soft inside of the pies.

Since the dough was a little difficult to manage, my children could not help me cut out the pies but did fill the pie cups with the filling! Such acts give them a sense of involvement and achievement of baking something of their own I suppose.

Notes;
These are single crust pies, you can add another cover using the same dough to make it double crusted pie.
Use full all purpose flour for a much lighter and crispy crust.
Try banana, apples, peaches and plums as a fruit filling.
Add a little milk to the dough if you find it hard to roll and make crusts.
Palm sugar gave a very earthy flavor and a lovely rich brown color to the Pears pie.
