. 3/4 cup Friulano cheese, shredded (or other mild, melting cheese)
. 1/4 cup Parmesan cheese, grated

. Rule of thumb: heaping 1/2 cup of uncooked Wild rice renders about 2 cups cooked. > Cooking method: Rinse the rice. Then, in a small saucepan, boil 2-1/2 cups of water. Add in the rice. When there is a surface boil, lower the heat to LOW-MEDIUM and cook for 25 minutes. Shut the heat. Cover and let it rest for a little while. Drain and fluff with a fork.
