Winter Vegetable Beef Stew

Ingredientes

  • 3 onions chopped
  • 2 T butter
  • 1 lb. lean ground beef
  • 1 garlic clove, minced
  • 4 cups beef stock
  • 2 large cans whole tomatoes
  • 1 cup diced potatoes
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 cup diced green beans
  • 2 T red wine vinegar
  • 2 T. chopped parsley
  • 1/2 t. basil
  • 1/2 t. thyme
  • salt & pepper to taste

Direcciones

  1. In a soup kettle, cook the onions in butter until they are golden and tender.
  2. Stir in the ground beef & garlic.
  3. Drain.
  4. Cook until the meat is brown.
  5. Add remaining ingredients and bring to a boil.
  6. Reduce heat and simmer for 1 1/4 hours.
