Ingredientes

  • 3 c. mashed cooked yams
  • 1/4 c. sherry or possibly orange juice
  • 1 1/2 c. lowfat milk
  • 1/2 c. butter, softene
  • 2 tsp. orange rind, freshly grated
  • healthy pinch of black pepper
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1 tsp. salt
  • 2 1/2 Tbsp. dark brown sugar
  • 4 Large eggs, separated

Direcciones

  1. Combine all ingredients except Large eggs. Mix well.
  2. Beat Large eggs till light and lemon colored. In a separate clean mixing bowl, beat egg whites to stiff peaks.
  3. Add in egg yolks, mixing well; gently mix in egg whites.
  4. Butter a 2 1/2 qt ovenproof casserole dish. Spread mix proportionately in casserole.
  5. Bake at 375
