Ingredientes

  • 200g cooked soba noodles
  • topping: 30g shredded carrots
  • 30g thinly-sliced green peppers
  • 2 sliced shitake mushrooms
  • 1 egg
  • seasoning: 1 tablespoon light soy sauce
  • ½ teaspoon salt
  • 1 teaspoon mirin
  • a few drops of sesame oil
  • yasai sauce: 1 tablespoon mirin
  • ½ tablespoon rice vinegar
  • ½ tablespoon light soy sauce
  • a few drops sesame oil
  • 1 teaspoon each of finely chopped red and green peppers, coriander, and ginger
  • garnish: pickles
  • sesame seeds
  • 1 spring onion, finely chopped

Direcciones

  1. Put all the ingredients, except the egg, into a bowl with the seasoning and mix them with your hand. Then crack the egg into the bowl and mix thoroughly.
  2. Heat a couple of teaspoons of vegetable oil in a wok or frying pan until the oil starts to smoke.
  3. Put the mixed ingredients into the hot pan and fry until golden, stirring occasionally with a wooden spoon.
  4. Combine the ingredients of the yasai sauce and taking it off the heat, mix it with the cooked noodles. Then turn the noodles out onto a plate and garnish with pickles, finely chopped spring onion and a sprinkling of sesame seeds.
