Yellow Veggie Curry

Colourful dishes are much more fun to eat so experiment with some different veg when trying this out.

Ingredientes

  • 2 medium potatoes, diced
  • 4-6 cauliflower florets, chopped
  • 8 cherry tomatoes
  • Half a courgette, diced
  • Some chopped red onion
  • 300ml veggie stock
  • Juice of half a lemon
  • Half tsp turmeric
  • Half tsp cumin
  • Half tsp ginger
  • Fresh coriander
  • Some veggie oil
  • Naan bread to serve

Direcciones

  1. Heat the oil in a pan and fry the potatoes for about 5 minutes. Add the cauliflower, followed by the turmeric, cumin and ginger. Mix well.
  2. Pour in the stock and leave to simmer for about 10 minutes.
  3. Add the rest of the veg and squeeze in the lemon juice. Simmer for another 5 minutes until everything is heated through.
  4. Garnish with some fresh coriander and serve with naan bread.
