%3C/p%3E%3Cp%3E...speaking%20of%20stock,%20I've%20become%20a%20total%20freak%20about%20making%20my%20own.%20If%20anyone's%20interested%20in%20a%20post%20on%20stock%20making,%20let%20me%20know!%3C/p%3E%3Cp%3EWhere%20was%20I?%20Right,%20cooking%20the%20lentils%20in%20wine%20-%20I%20just%20couldn't%20do%20it.%20I%20totally%20wanted%20some%20wine%20in%20the%20dish%20but%20it%20didn't%20make%20sense%20to%20me%20to%20only%20have%20it%20in%20the%20cooking%20liquid.%20I%20added%20my%20wine%20at%20a%20point%20when%20I%20could%20incorporate%20it%20into%20the%20whole%20dish.%3C/p%3E%3Cp%3ESome%20recipes%20had%20the%20fully%20cooked%20lentils%20being%20added%20to%20the%20separately%20cooked%20sausage%20at%20the%20very%20last%20minute%20before%20serving.%20I%20envisioned%20more%20melding%20of%20the%20flavours.%20I%20figured%20if%20I%20waited%20to%20add%20the%20two%20components%20together%20at%20the%20last%20minute%20I'd%20missing%20out%20on%20an%20opportunity%20to%20allow%20the%20lentils%20to%20soak%20up%20the%20oils%20from%20the%20chorizo.%3C/p%3E%3Cp%3ESo%20this%20is%20what%20I%20came%20up,%20kind%20of%20a%20combo%20of%20what%20I%20saw%20as%20the%20best%20of%20all%20the%20recipes%20I%20found.%3C/p%3E%3Cp%3ESeaBass%20had%20never%20had%20lentils%20before%20either...and%20was%20disturbed%20by%20the%20look%20of%20them%20when%20he%20came%20home%20-%20he's%20getting%20a%20little%20suspicious%20in%20his%20old%20age.%20I%20think%20he's%20spending%20too%20much%20time%20with%20my%20Dad.%3C/p%3E%3Cp%3EBut%20he%20loved%20them!%20After%20slopping%20down%20to%20super-human%20sized%20bowls%20he%20started%20feeding%20me%20suggestions%20for%20more%20lentil%20dishes.%3C/p%3E%3Cp%3EAs%20for%20me,%20I%20thought%20they%20were%20pretty%20damn%20good%20-%20if%20I%20do%20say%20so%20myself.%20The%20smokiness%20of%20the%20chorizo,%20the%20slight%20sweetness%20of%20the%20onion%20and%20garlic,%20the%20heat%20from%20the%20chili%20flakes%20made%20their%20way%20into%20every%20bit%20of%20the%20rich,%20slightly%20al%20dente%20lentils.%20The%20addition%20of%20the%20lentil%20cooking%20water%20blends%20everything%20together%20and%20adds%20even%20more%20lentil%20flavour.%20I%20love%20the%20pop%20of%20each%20individual%20lentil%20in%20your%20mouth.%3C/p%3E%3Cp%3EThis%20is%20a%20totally%20simple%20dish%20that%20I%20will%20be%20cooking%20again%20and%20again.%3C/p%3E%3Cp%3EAdd%20lentils,%20liquid%20(stalk,%20water%20or%20combo),%20carrot,%20celery%20and%20bay%20leaf%20to%20pot.%3C/p%3E%3Cp%3EBring%20lentils%20to%20boil%20uncovered.%3C/p%3E%3Cp%3ECover%20and%20turn%20heat%20down%20to%20low.%3C/p%3E%3Cp%3EAllow%20to%20simmer%20for%2015-20%20mins%20(the%20lentils%20will%20still%20be%20very%20firm).%3C/p%3E%3Cp%3EWhile%20lentils%20are%20cooking%20heat%20olive%20oil%20and%20chili%20flakes%20in%20deep%20saute%20pan%20or%20pot.%3C/p%3E%3Cp%3EAdd%20onion%20and%20garlic%20to%20pan%20and%20saute%20until%20translucent.%3C/p%3E%3Cp%3EDice%20chorizo%20and%20add%20to%20pan.%3C/p%3E%3Cp%3ESaute%20until%20chorizo%20is%20cooked%20through.%3C/p%3E%3Cp%3ERemove%20from%20heat%20until%20lentils%20are%20cooked.%3C/p%3E%3Cp%3EWhen%20lentils%20are%20ready%20return%20chorizo%20to%20heat.%3C/p%3E%3Cp%3EAdd%20splash%20of%20white%20wine%20to%20deglaze%20pan.%3C/p%3E%3Cp%3EAllow%20to%20cook%20down%20for%20a%20couple%20of%20minutes.%3C/p%3E%3Cp%3EDrain%20liquid%20from%20lentils.%20Reserve%20liquid.%3C/p%3E%3Cp%3ERemove%20carrot,%20celery,%20etc.%20from%20lentils.%3C/p%3E%3Cp%3EAdd%20lentils%20to%20pan%20with%20chorizo.%3C/p%3E%3Cp%3EAdd%201/2%20cup%20of%20liquid%20from%20lentils.%3C/p%3E%3Cp%3ECook%20on%20low%20heat%20until%20lentils%20reach%20desired%20consistency.%3C/p%3E%3Cp%3EContinue%20to%20add%20liquid%20if%20needed%20to%20keep%20the%20mixture%20loose%20and%20stew%20like.%3C/p%3E){kind=link}
