%3C/p%3E%3Cp%3EI%20love%20thee%20roasted,%20sauteed%20and%20stuffed.%3C/p%3E%3Cp%3EI%20love%20thee%20in%20every%20which%20way!%3C/p%3E%3Cp%3ENow%20Eric,%20he%20has%20no%20love%20for%20the%20bell%20pepper,%20much%20to%20my%20sadness.%20I%E2%80%99m%20pretty%20sure%20his%20complaint%20is%20commonplace%20among%20the%20pepper%20haters%20out%20there%20%E2%80%93%20he%20says%20it%20takes%20over%20the%20dish%20and%20it%E2%80%99s%20all%20you%20can%20taste.%3C/p%3E%3Cp%3EWell.%20Hmpf.%20Okay,%20okay.%20It%E2%80%99s%20a%20strong%20flavor,%20I%E2%80%99ll%20give%20him%20that.%20But%20it%E2%80%99s%20a%20DELICIOUS%20strong%20flavor.%3C/p%3E%3Cp%3EWell,%20Eric%20had%20to%20go%20out%20of%20town%20this%20past%20week%20for%20work%20so%20I%20did%20what%20any%20normal%20girl%20would%20do%20when%20her%20husband%20is%20away%20%E2%80%93%20I%20gorged%20myself%20on%20bell%20peppers.%20%20In%20the%20form%20of%20this%20absolutely%20fab%20chunky,%20tomato/bell%20pepper%20pasta%20sauce%20called%20peperonata.%3C/p%3E%3Cp%3EI%20found%20this%20recipe%20in%20an%20old%20cookbook%20I%20stole%20borrowed%20from%20my%20mom.%20I%E2%80%99m%20not%20sure%20where%20she%20got%20it%20but%20with%20a%20name%20like%20Great%20Taste,%20Low%20Fat,%20it%20sounds%20kinda%20gimmicky,%20doesn%E2%80%99t%20it?%20Like%20something%20you%20might%20find%20in%20the%20coupon%20inserts%20in%20the%20Sunday%20paper%20%E2%80%93%20right%20next%20to%20the%20tunics%20with%20matching%20elastic%20pants,%20orthopedic%20shoes%20and%20creepy%20dolls%20that%20NO%20ONE%20EVER%20BUYS.%20It%E2%80%99s%20actually%20a%20really%20nice%20book,%20with%20pics%20of%20every%20recipe%20(all%20of%20which%20are%20under%20400%20calories)%20and%20some%20really%20delicious%20dishes%20inside!%20Including%20this%20one!%20(PS%E2%80%A6Mom,%20if%20you%20want%20this%20book%20back,%20let%20me%20know.%20I%20know%20you%20said%20I%20could%20borrow%20it,%20but%20I%20don%E2%80%99t%20think%20you%20said%20I%20could%20KEEP%20it.%20LOL.)%3C/p%3E%3Cp%3EThis%20is%20such%20a%20fun%20and%20refreshing%20pasta%20topping,%20with%20warm,%20chunky%20tomatoes,%20peppers%20and%20fresh%20herbs.%20I%20bet%20this%20would%20be%20SO%20GOOD%20with%20the%20bounty%20from%20your%20very%20own%20garden%20this%20summer.%20The%20ingredients%20are%20simple,%20but%20they%20come%20together%20really%20nicely.%20It%E2%80%99s%20not%20heavy%20(only%20295%20calories%20per%20serving!%20Before%20cheese,%20of%20course)%20so%20it%E2%80%99s%20a%20pasta%20dish%20you%20can%20feel%20good%20about%20eating.%3C/p%3E%3Cp%3EThe%20recipe%20recommends%20using%20wagon%20wheel%20pasta,%20which%20I%20really%20like%20but%20have%20a%20hard%20time%20finding%20for%20whatever%20reason.%20I%20subbed%20in%20a%20flower%20shape,%20which%20was%20fine,%20but%20didn%E2%80%99t%20really%20allow%20for%20the%20sauce%20to%20get%20all%20stuck%20in%20the%20nooks%20and%20crannies%20like%20a%20wheel%20shape%20would.%20I%20kinda%20miss%20that.%20And%20I%E2%80%99m%20not%20sure%20what%20I%20was%20thinking%20getting%20the%20tri-colored%20stuff%E2%80%A6I%20hadn%E2%80%99t%20had%20it%20in%20a%20while%20and%20thought%20it%20might%20be%20fun,%20but%20it%20turns%20out%20it%20has%20a%20phony-baloney%20chemical%20dye%20taste%20to%20it%20that%20I%20just%20can%E2%80%99t%20recommend.%3C/p%3E%3Cp%3ESo,%20don%E2%80%99t%20be%20like%20me%E2%80%A6you%20know%E2%80%A6all%20%E2%80%9Coooo.%20purty%20colors.%20me%20buy%20this%20now.%E2%80%9D%20Resit.%20Really,%20you%E2%80%99ll%20thank%20me.%20If%20you%20can%20find%20whole%20wheat%20wagon%20wheels%20(whoa.%20that%E2%80%99s%20a%20mouthful!)%20I%E2%80%99d%20go%20with%20that%20as%20my%20first%20choice!%3C/p%3E%3Cp%3EAs%20far%20as%20other%20changes%20go,%20I%20left%20out%20the%20black%20olives%20because%20I%E2%80%99m%20not%20a%20big%20fan,%20but%20if%20you%20like%20%E2%80%98em%20by%20all%20means%20add%20them.%20I%E2%80%99m%20sure%20they%E2%80%99d%20bring%20a%20great%20salty%20bite%20and%20tang.%20Instead%20of%20the%20olives,%20I%20added%20a%20chopped%20shallot%20for%20a%20mild%20onion%20flavor%20in%20the%20background.%20And%20I%20had%20a%20pint%20of%20grape%20tomatoes%20on%20hand,%20so%20I%20used%20those%20instead%20of%20chopped%20tomatoes%20%E2%80%93%20I%20just%20cut%20some%20of%20the%20bigger%20ones%20in%20half.%3C/p%3E%3Cp%3EPEPERONATA%20PASTA%20(Recipe%20adapted%20from:%20Great%20Taste,%20Low%20Fat)%3C/p%3E%3Cp%3EINGREDIENTS:%3C/p%3E%3Cp%3E1%20tablespoon%20olive%20oil%3C/p%3E%3Cp%3E2%20green%20bell%20peppers,%20diced%3C/p%3E%3Cp%3E1%20red%20bell%20pepper,%20diced%3C/p%3E%3Cp%3E1%20yellow%20or%20additional%20red%20pepper,%20diced%20(I%20used%20another%20red,%20but%20I%E2%80%99d%20go%20with%20the%20yellow%20to%20punch%20up%20the%20color%20and%20wow-factor.%20It%E2%80%99s%20just%20that%20red%20was%20on%20sale%20and%20yellow%20wasn%E2%80%99t%E2%80%A6so%20yeah%E2%80%A6red%20it%20is.%20This%20cheapness.%20It%E2%80%99s%20a%20problem.%20)%3C/p%3E%3Cp%3EDIRECTIONS:%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20heat%20the%20oil%20until%20hot%20but%20not%20smoking.%20Add%20the
