We are moving on to the last and final letter Z and we are going to Zimbabwe today. Zimbabwe is a landlocked country located in southern Africa, between Zambezi & Limpopo rivers.
Zimbabwean cuisine is much like the other African countries. They rely on a few staple foods. Cornmeal is used to make porridge called sadza or isitshwala and is usually served with meat and vegetables. Rice, pasta and potato based foods also make up part of Zimbabwean cuisine. A local favorite is rice cooked with peanut butter that is served with thick gravy, mixed vegetables and meat.
Peanuts and peanut butter are popular ingredients in the cuisine. Today's dish of Spinach with peanut butter was a super hit in my house. My husband is not a big peanut butter fan, so I added only 1 tablespoon and he really liked the creaminess and the slight nuttiness it imparted to the dish. Increase the quantity of peanut butter if you like its taste. I served this like a curry with some steamed rice.

Ingredients:
- Spinach - half a bunch, chopped
- Onion - 1 medium, chopped
- Tomatoes - 2 medium, chopped
- Green Chili - 1, chopped
- Garlic - 2 cloves, finely minced
- Peanut Butter - 1tbsp (add more if you like)
- Salt & Pepper - to taste
- Parsley & Cilantro - 1tbsp each, chopped
Method:
Add 2tsp oil in a saute pan; add onions and cook till they turn lightly browned around the edges.
Add the garlic, tomatoes, herbs, green chili, salt and pepper. Cook for 5~6 minutes or until tomatoes turn mushy.
Next add the chopped spinach, cover and cook till spinach is cooked through, about 4~5 minutes.
Finally add peanut butter and cook till heated through, about 2~3 minutes. Serve with steamed rice.
