Ingredientes

  • 1 c. walnuts
  • 4 large eggs
  • 3 1/2 c. flour
  • 1 c. oil
  • 1 1/2 teaspoon baking soda
  • 1 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3/4 teaspoon baking pwdr
  • 1 teaspoon vanilla
  • 2 c. grated zucchini (unpeeled)
  • 1 c. raisins

Direcciones

  1. Chop walnuts coarse. Beat large eggs; add in sugar, then oil. Put together dry ingredients. Add in to first mix alternately with zucchini. Stir in raisins, nuts, and vanilla. Bake in 2 greased and floured loaf pans.Bake on lowest rack at 350 degrees for 55 min. Let stand about 20 min. Turn onto a wire rack to cool. Can be lightly glazed with powdered sugar or possibly iced with cream cheese frosting.
  2. Use 2 cups pumpkin in place of the zucchini and omit raisins for pumpkin bread.
