%20Banana%20Coffee%20Cake%3C/p%3E%3Cp%3ECan%20I%20just%20say%20that%20living%20alone%20is%20one%20the%20most%20depressing%20things%20I%20have%20ever%20done?%20And%20this%20fact%20is%20just%20emphasized%20every%20single%20time%20I%20go%20into%20the%20kitchen%20-%20breakfast%20for%20one,%20lunch%20for%20one,%20dinner%20for%20one,%20tea%20for%20one,%20and%20most%20sadly%20of%20all,%20dessert%20for%20one!%3C/p%3E%3Cp%3EI%20know%20you%20are%20probably%20all%20saying%20%22Enough%20with%20the%20self-pity,%20already.%22%20But%20this%20is%20a%20huge%20issue%20for%20me%20because%20not%20only%20am%20I%20lonely,%20but%20now%20because%20I%20have%20no%20one%20to%20share%20my%20goodies%20with%20I%20make%20them%20a%20lot%20less%20often,%20and%20that%20makes%20me%20sad,%20too.%3C/p%3E%3Cp%3EOk,%20my%20rant%20is%20over,%20I%20promise.%20Now%20let%20me%20tell%20you%20just%20how%20good%20this%20coffee%20cake%20is.%20I%20done%20some%20reading%20and%20researching%20when%20I%20decided%20to%20turn%20my%20latest%20batch%20of%20rotting%20bananas%20into%20a%20sweet%20treat%20and%20through%20the%20jigs%20and%20the%20reels%20I%20came%20up%20with%20a%20very%20moist,%20very%20tasty,%20and%20semi-light%20coffee%20cake%20(if%20you%20cut%20the%20amount%20of%20chocolate,%20drastically%20LOL).%20My%20only%20issue%20was%20that%20I%20added%20a%20little%20too%20much%20chocolate.%20I%20know,%20I%20can%20hear%20your%20gasps%20of%20shock%20and%20disbelief,%20but%20it's%20true%20-%20it%20was%20a%20little%20too%20chocolate-y,%20even%20for%20me.%20But%20other%20than%20that%20it%20is%20fantastic%20and%20will%20now%20be%20a%20go-to%20recipe,%20when%20fiance%20comes%20to%20visit%20and%20I%20have%20someone%20to%20share%20it%20with%20that%20is%20:)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3ESteps%3C/p%3E%3Cp%3E-Preheat%20oven%20to%20350%C2%BA%20and%20spray%20a%20loaf%20pan%20with%20non-stick%20spray.%3C/p%3E%3Cp%3E-Mix%20together%20first%204%20ingredients%20and%20set%20aside.%3C/p%3E%3Cp%3E-Sift%20together%20dry%20ingredients.%3C/p%3E%3Cp%3E-Cream%20together%20butter%20and%20sugar.%20Add%20egg%20white,%20bananas,%20and%20sour%20cream.%3C/p%3E%3Cp%3E-Stir%20in%20dry%20ingredients%20with%20as%20few%20strokes%20as%20possible.%3C/p%3E%3Cp%3E-Pour%20half%20of%20batter%20into%20pan.%20Spread%20half%20the%20streusel%20over%20top.%20Cover%20with%20remaining%20batter.%20Spread%20remaining%20streusel%20over%20top.%3C/p%3E%3Cp%3E-Bake%20for%2025-30%20minutes.%3C/p%3E){kind=link}
