- Ingredients:1 cup almond milk, microwaved 30 seconds to remove the chill
- ⅔ cup sugar
- 2 packages instant yeast
- 2 large eggs, lightly beaten
- 12 Tbsp. unsalted butter, softened and divided (8 Tbsp. for dough and 4 Tbsp. for filling and greasing pan)
- 5¼ cups all-purpose flour (Start with 4 cups and add more as needed)
- 1 cup ground flax meal
- ½ tsp. salt
- For the Filling:
- ¾ cup apple butter
- 1/2 teaspoon cinnamon
- ½ cup dark brown sugar, divided (1/4 cup for filling and ¼ cup for the bottom of the baking pan)
- ½ cup pecans, roasted and roughly chopped

%3C/p%3E%3Cp%3ECinnamon,%20apple,%20pumpkin,%20bacon,%20bacon%20with%20a%20hit%20of%20cayenne...you%20name%20it,%20I'll%20try%20it.%20%20I%20recently%20posted%20the%20apple%20filled%20buns%20from%20a%20previous%20Secret%20Recipe%20Club%20post.%20%20No%20surprise%20that%20today's%20post,%20also%20another%20Secret%20Recipe%20Club%20post%20is%20also%20a%20bun%20of%20another%20type.%20%20Today%20there%20will%20be%20no%20pretty%20white%20frosting%20topping%20these%20buns.%20%20These%20buns%20don't%20need%20it%20to%20be%20sexy.%3C/p%3E%3Cp%3EI%20found%20the%20recipe%20on%20The%20Inquiring%20Chef%20which%20was%20my%20assigned%20blog%20for%20this%20month.%20%20Jess,%20the%20author%20of%20this%20blog%20impresses%20me%20with%20her%20travels,%20she%20has%20moved%20around%20a%20lot%20(from%20Kansas,%20to%20Romania,%20Bulgaria,%20DC,%20and%20Thailand!)%20%20and%20she%20loves%20Thai%20Food%20(currently%20in%20Bangkok)%20something%20that%20I%20can%20relate%20to!%20%20Alas,%20I%20did%20not%20make%20one%20of%20her%20Thai%20recipes.%20%20I%20went%20with%20another%20favorite%20thing%20of%20mine,%20which%20is%20the%20aforementioned.%3C/p%3E%3Cp%3EAbout%20these%20sexy%20little%20buns.%20%20When%20I%20last%20visited%20my%20Dad%20and%20Mom,%20one%20of%20the%20treasures%20I%20came%20home%20with%20was%20apple%20butter%20that%20they%20had%20made.%20%20So,%20when%20I%20saw%20this%20recipe,%20saw%20that%20it%20had%20apple%20butter%20spread%20along%20with%20one%20of%20my%20favorite%20nuts,%20the%20pecan,%20I%20decided%20I%20had%20to%20go%20this%20route.%20%20I%20had%20pecans%20in%20my%20freezer%20that%20I%20wanted%20to%20use%20up.%20%20I%20also%20had%20some%20flax%20meal.%20%20The%20less%20I%20have%20to%20pack,%20the%20better%20off%20we%20will%20be,%20that%20is%20my%20motto%20right%20now!%20%20So,%20I%20adapted%20the%20recipe%20some%20to%20use%20the%20flax%20meal.%20%20I%20also%20used%20a%20different%20method%20than%20Jess%20did%20in%20making%20my%20dough.%20%20I%20went%20the%20lazy%20but%20oh%20so%20easy%20route.%20%20My%20kitchen%20aid.%20%20I%20love%20that%20machine!%20%20Because%20I%20used%20my%20kitchen%20aid,%20I%20mixed%20the%20dough%20as%20if%20I%20was%20mixing%20it%20in%20a%20bread%20dough%20machine%20and%20added%20wet%20ingredients,%20then%20my%20dry%20ingredients%20with%20the%20yeast%20on%20top.%20%20I%20also%20used%20white%20whole%20wheat%20flour%20and%20flax%20meal.%20%20I%20needed%20more%20flour%20than%20the%20original%20recipe%20called%20for.%20%20My%20adaptations%20are%20listed%20in%20the%20recipe%20below.%20%20Please%20visit%20The%20Inquiring%20Chef%20for%20the%20original%20recipe!%20%20Note,%20I%20used%20my%20kitchen-aid%20however%20you%20don't%20have%20to%20have%20one%20to%20use%20my%20method.%20%20You%20can%20do%20it%20all%20by%20hand%20or%20you%20can%20put%20the%20dough%20in%20your%20bread%20machine%20following%20the%20same%20instructions%20-%20wet%20ingredients%20first,%20then%20dry.%20%20Because%20I%20had%20to%20adjust%20the%20amount%20of%20flour,%20I%20would%20suggest%20adding%204%20cups%20first%20then%20gradually%20ad%20more%20as%20needed.%20%20You%20will%20know%20you%20have%20enough%20flour%20when%20the%20dough%20is%20no%20longer%20wet%20and%20sticky%20and%20forms%20a%20ball.%3C/p%3E%3Cp%3EApple%20Butter%20Pecan%20Sticky%20Buns%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3EIn%20bowl%20of%20kitchen%20aid,%20using%20dough%20hook%20attachment,%20mix%20almond%20milk,%20eggs,%20and%20sugar.%20%20Place%20flax%20meal,%20flour,%20salt%20in%20bowl.%20%20Turn%20kitchen%20aid%20on%20and%20mix%20until%20starts%20to%20form%20a%20dough.%20%20Place%208%20tbsp%20butter,%20scattered,%20in%20the%20bowl.%20%20Turn%20on%20kitchen%20aid%20and%20mix%20until%20dough%20comes%20together.%20%20Add%20more%20flour%20as%20needed%20until%20dough%20is%20no%20longer%20sticky%20and%20forms%20a%20ball.%20%20Let%20Kitchen-Aid%20do%20your%20knead%20work%20by%20turning%20it%20on%20medium%20speed%20and%20let%20the%20dough%20hook%20do%20it's%20work%20-%20for%20about%205%20minutes.%3C/p%3E%3Cp%3ERemove%20dough%20from%20bowl%20and%20on%20a%20lightly%20floured%20surface,%20knead%20dough%20and%20form%20into%20a%20ball.%20%20Clean%20mixer%20bowl%20and%20then%20spray%20bowl%20with%20cooking%20spray.%20%20Place%20dough%20in%20bowl%20and%20cover%20with%20plastic%20wrap.%20%20Set%20in%20a%20warm%20dry%20place%20and%20let%20rise%20until%20double.%20%20About%201%20hour.%3C/p%3E%3Cp%3EPunch%20down%20dough%20and%20remove%20from%20bowl.%20%20Place%20on%20lightly%20floured%20surface%20and%20roll%20dough%20out%20in%20a%20rectangular%20shape%20(12x24).%20%20Spread%20butter%20over%20dough%20then%20spread%20with%20apple%20butter.%20%20Sprinkle%20with%201/4%20brown%20sugar%20and%20cinnamon.%20%20Top%20with%20pecans.%20%20Starting%20at%20the%20bottom%20of%20the%20roll%20(side%20closest%20to%20you)%20roll%20the%20dough%20tightly%20into%20a%20log.%20%20I%20use%20dental%20floss%20(unflavored,%20unwaxed)%20to%20slice%20the%20dough.%20%20Slide%20the%20dental%20floss%20under%20the%20roll%20and%20go%20to%20the%20center.%20%20Slice%20dough%20by%20pulling%20the%20dental%20floss%20together%20and%20cross%20(to%20cut%20the%20dough).%20%20I%20got%2012%20rolls%20from%20my%20batch.%3C/p%3E%3Cp%3EMelt%20remaining%20butter%20and%20pour%20in%20bottom%20of%209x12%20pan.%20%20Sprinkle%20with%20brown%20sugar.%20%20Place%20rolls%20in%20pan%20and%20set%20aside%20in%20a%20warm,%20draft%20free%20spot%20to%20rise.%20%20Let%20rise%20about%2030%20minutes.%20%20Now%20is%20a%20good%20time%20to%20start%20preheating%20the%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EPlace%20rolls%20in%20oven%20and%20bake%2035%20-%2040%20minutes%20until%20golden%20brown.%20%20Remove%20from%20oven.%20%20Let%20sit%2010%20minutes.%20%20Turn%20rolls%20out%20onto%20serving%20platter.%20%20The%20ooey,%20gooey,%20sugary,%20sticky%20part%20will%20now%20be%20on%20top.%20%20Enjoy!%3C/p%3E%3Cp%3ETo%20see%20what%20other%20SRC%20club%20members%20were%20doing%20in%20their%20kitchens%20this%20last%20month,%20please%20follow%20the%20links!%3C/p%3E){kind=link}
