Ingredientes

  • 4 lb Pork backrib, 4 - full racks
  • 1 x Orange
  • 14 ounce Apricots, liquid removed
  • 1/4 c. Honey
  • 1/3 c. Chutney, finely minced
  • 1 tsp Lemon rind, grated
  • 2 Tbsp. Lemon juice
  • 1/3 c. Tomato puree
  • 1 x Clove garlic, chopped
  • 1/2 tsp Salt
  • 1 lrg Onion

Direcciones

  1. Several hrs before cooking meat, cut orange in half. Rub juice on each rack of ribs. Allow to marinate till cooking time.
  2. Combine all remaining ingredients. Bring to simmer in a small saucepan.
  3. Simmer for 2 min. Remove from heat. Set aside to cold.
  4. Prepare barbecue coals. When ready brush ribs with sauce. Grill 35 - 45 min in all, Start ribs rounded-side up; turning ribs every 10 min.
  5. Brush with sauce frequently.
  6. When cooked through, and sides are crisp and glazed, remove from fire.
  7. Serve one rack per person.
