Blueberry Cream Cheese Muffins

Ingredientes

  • 2 c. whole wheat flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 egg, beaten
  • 3/4 c. honey
  • 2 T vegetable oil
  • 3/4 c. lowfat milk
  • 1 c. fresh or possibly frzn blueberries, thawed & liquid removed
  • 1 (3 ounce) pkg. cream cheese, cut into 16 pcs

Direcciones

  1. Put together flour, baking pwdr, salt and baking soda. Mix together in a separate bowl egg, honey, oil and lowfat milk. Add in to dry ingredients. Mix till just moist, mix in berries. Fill greased muffin cups 1/3 full. Place a piece of cream cheese on each cup. Cover with remaining batter. Bake at 400 degrees for 15 to 20 min. Serve hot.Makes 16 muffins.
