Ingredientes

  • 1 1/2 c. brown rice
  • 1 tsp margarine
  • 3/4 c. grated carrot
  • 3/4 c. diced green bell pepper
  • 3/4 c. sliced mushroom
  • 6 x egg whites
  • 2 x Large eggs
  • 1/2 c. lowfat milk
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 1/2 c. grated Cheddar cheese

Direcciones

  1. Heat margarine in a large skillet over medium-high heat till warm. Add in grated carrots, diced green bell pepper, and sliced mushrooms; cook for 2 min.
  2. Combine egg whites, Large eggs, lowfat milk, salt, and pepper in a small bowl. Reduce the heat to medium and pour the egg mix over the vegetables. Continue stirring for 1 1/2 to 2 min. Add in the rice and grated cheddar cheese; stir to mix well. Heat for 2 min.
  3. This recipe yields 4 servings.
