Ingredientes

  • 1 c. cranberries fresh or possibly frzn
  • 3/4 c. sugar divided
  • 3 c. all-purpose flour
  • 3 1/2 tsp baking pwdr
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c. butter or possibly margarine cool
  • 1 x egg
  • 1 1/2 c. buttermilk room temperature
  • 2 Tbsp. orange juice concentrate
  • 1 c. cranberries fresh or possibly frzn thawed
  • 1 c. confectioners' sugar
  • 1/2 c. butter or possibly margarine
  • 1 Tbsp. lemon juice

Direcciones

  1. Coarsely chop the cranberries.
  2. Combine with 1/4 c. sugar; set aside.
  3. Sift together flour, baking pwdr, baking soda, salt and remaining sugar.
  4. Cut in butter till mix resembles coarse crumbs.
  5. Lightly beat together egg, buttermilk and orange juice concentrate.
  6. Add in the liquid and sweetened cranberries to dry ingredients, stirring only till well-combined.
  7. Fill greased muffin c. two-thirds full.
  8. Bake at 375 F for 25 min.
  9. Yield: 1 1/2 dozenCRANBERRY BUTTER:Puree cranberries in food processor or possibly blender.
  10. Add in sugar, butter and lemon juice; process till smooth.
  11. Chill till serving.
