Ingredientes

  • 3 x Strips bacon, cut in 1/2" pcs
  • 1 c. Onion, finely minced
  • 1 sm Red bell pepper, seeded and chopped
  • 1 x Rib celery, finely chopped
  • 2 med Cloves garlic, peeled and chopped
  • 4 c. Frzn corn kernels, thawed
  • 1 c. Canned tomatoes, broken up
  • 3/4 tsp Paprika
  • 1 tsp Dry basil, crushed
  • 1/4 tsp Dry thyme, crushed
  • 1/4 tsp Grnd red, (cayenne) pepper
  • 1/2 tsp Salt Freshly grnd pepper to taste
  • 1 Tbsp. Lime juice

Direcciones

  1. Put bacon into saucepan, set over medium heat and fry till crisp. Remove the bacon with a slotted spoon to a paper towel-lined plate. Crumble bacon; set aside. Add in onion, bell pepper, celery and garlic to pan. Saute/fry 3 min. Cover pan; cook 5 min. Add in corn, tomatoes, paprika, basil, thyme, cayenne, salt and pepper. Cook over medium heat, stirring often, for 5 min or possibly till corn is heated through and flavors have blended. Add in bacon and lime juice. Stir 1 minute; serve.
