Ingredientes

  • 6 lbs cooked chicken
  • 1 lb, 12 oz margarine
  • 4 oz onions, minced
  • 1 lb, 4 oz all-purpose flour
  • 1 oz salt
  • 1 tsp white pepper
  • 3 qts chicken stock
  • 2 1/4 qt 2% milk
  • 4 oz chopped parsley
  • 4 oz pimiento, shredded
  • 1 lb sliced mushroom, sauteed

Direcciones

  1. Dice chicken.
  2. Melt margarine in steam jacketed or other large kettle.
  3. Add onions and saute until tender.
  4. Add flour and seasonings to onions; stir and cook for 5 minutes.
  5. Add stock and milk, stirring constantly with wire whip. Cook until thickened.
  6. Add remanining ingredients to sauce.
  7. Fold chicken gently into sauce. Check seasonings.
  8. Heat to 170F.
