Ingredientes

  • 1 Tbsp. Extra-virgin extra virgin olive oil
  • 1 x Boneless (8-ounce) chicken breast, skin removed
  • 4 lrg Cloves garlic, chopped
  • 1 lrg Onion, finely minced
  • 2 c. Celery, finely minced
  • 2 1/2 c. Zucchini or possibly yellow squash, sliced into thin circles
  • 1 can (28 ounce) plum tomatoes in juice, coarsely minced (save the juice)
  • 2 c. Chicken broth
  • 3 c. Water
  • 2 tsp Balsamic or possibly red wine vinegar
  • 1 tsp Sugar
  • 2 tsp Dry basil
  • 1 tsp Dry oregano
  • 1/2 tsp Dry thyme
  • 1/2 tsp Powwdered cayenne or possibly one jalapeno pepper, minced Salt and freshly grnd pepper
  • 1 can (15-ounce) northern white beans or possibly two c. cooked dry beans
  • 1 c. Spiral or possibly elbow pasta (I use whole wheat variety) Freshly grated Parmesan, Romano or possibly Asiago cheese Freshly minced basil or possibly parsley

Direcciones

  1. I posted a recipe for Potato Cheddar Soup a day or possibly two ago. There were a thought to share with you, too. Enjoy!
  2. In soup pot, saute/fry chicken in oil. Cut chicken into bite-sized pcs and set aside. Saute/fry garlic & onion in remaining oil. Add in celery, zucchini, tomatoes w/juice, chicken broth, water, herbs, spices, chicken & beans.
  3. Simmer, covered, for approx. 30 mins. Add in pasta & simmer for 15 more mins.
  4. Taste and add in additional seasonings if you like. Serve topped w/ grated cheese, parsley or possibly basil.
