Ingredientes

  • 2 1/2 c. Corn kernels, fresh (3 ears) or possibly frzn
  • 2 x Large eggs
  • 1/2 c. Buttermilk
  • 1/4 c. Oil
  • 1 Tbsp. Honey
  • 1 Tbsp. Grnd dry red peppers
  • 1 c. Cornmeal
  • 1 c. Flour
  • 1 tsp Baking pwdr
  • 1/2 tsp Baking soda
  • 1 tsp Salt

Direcciones

  1. Preheat oven to 425.
  2. In large mixing bowl, beat Large eggs, add in buttermilk, oil, honey, warm red pepper, corn. Stir to blend.
  3. In smaller bowl, sift cornmeal, flour, baking pwdr, baking soda and salt.
  4. Add in dry to wet ingredients and stir to blend.
  5. Drop little mounds of batter (about 2 tbsp each) onto baking sheet, leaving 1/4" between.
  6. Bake for 20 minutes. til golden. Let rest for a minute before removing from sheet.
