Ingredientes

  • 1 c. flour
  • 1 c. yellow cornmeal
  • 1 tbsp. sugar
  • 1 tbsp. baking pwdr
  • 1 1/2 teaspoon salt
  • 1 lg. egg, beaten lightly
  • 1/2 c. lowfat milk
  • 1/2 stick (1/4 c.) unsalted butter, melted
  • 8 1/2 ounce. can cream-style corn

Direcciones

  1. Into a bowl sift together the flour, cornmeal, sugar, baking pwdr and salt. In another bowl combine the egg, lowfat milk, butter and corn. Add in egg mix to the flour mix; stir together lightly. Batter will be lumpy.
  2. Spoon batter into buttered 1/2 c. muffin tins, filling 7/8 full. Bake in middle of preheated warm oven (425 degrees) for 15-20 min. Makes 12.
