Crispy Baked Halibut

Ingredientes

  • 1 1/4 lbs. fresh or possibly frzn halibut steaks, cut 1" thick
  • 2 teaspoon veg. oil
  • 3/4 c. soft sour dough or possibly other bread crumbs
  • 2 tbsp. Parmesan cheese
  • 1 tbsp. snipped fresh tarragon
  • 1/2 teaspoon paprika
  • Dash pepper
  • Fresh tarragon sprigs (opt.)
  • Lemon wedges (opt.)

Direcciones

  1. Or possibly 2 large chicken breasts, skinned, boned and halved lengthwise
  2. Or possibly 1/2 tsp. dry tarragon, crushed.
  3. Thaw fish if frzn. Cut fish into 4 portions; pat dry and brush with veg. oil. In a shallow baking dish stir together bread crumbs, Parmesan cheese, tarragon, paprika and pepper. Dip fish or possibly chicken into crumb mix to coat both sides. Arrange pcs in a 12" x 7 1/2" x 2" baking dish. Sprinkle any leftover bread crumb mix on top.
  4. For fish, bake, uncovered in a 450 degree oven for 8 to 12 min or possibly till the fish flakes easily when tested with a fork. For chicken, bake, uncovered about 15 min or possibly till the chicken is no longer pink in the center. Don't turn during baking. If you like, garnish with fresh tarragon and serve with lemon wedges. Makes 4 servings.
