Ingredientes

  • 6 x Lemons ripe and juicy
  • 1 c. Sugar
  • 1 Tbsp. Salt
  • 1/2 tsp Fenugreek seeds
  • 1/2 tsp Fennel seeds
  • 1/2 tsp Nigella seeds, (kalonji)
  • 2 Tbsp. Chilli pwdr red
  • 1 Tbsp. Salt
  • 1/2 Tbsp. Turmeric pwdr
  • 1/2 Tbsp. Mustard seeds crushed coarsely
  • 1/2 tsp Asafoetida
  • 1/2 Tbsp. Oil

Direcciones

  1. Wash lemons and wipe dry.
  2. Quarter lemons, deseed them carefully.
  3. Run them in a blender with sugar.
  4. The lemons should turn to coarse crumb like bits.
  5. Heat oil in a small pan, add in seeds, allow to splutter, cold.
  6. Add in all remaining ingredients, including salt and lemons, mix well.
  7. Sun this mix for 4 days until matured.
  8. Making time: 30 min. Maturing time 4 days.
  9. Makes: 500 g of pickle (approx.)
  10. Shelflife: 2 months
