  • 1.3 cups Bob's Red Mill Gluten Free Flour
  • 0.5 cup potato starch
  • 1 tsp salt, kosher
  • 2 tsp xanthan gum
  • 2 large egg
  • 4 large egg, yolks
  • 2 Tb Bob's Red Mill Gluten Free Flour

Direcciones

  1. Mix the dry ingredients in the bowl of a food processor; holding back 2 Tb of the flour. Whip the egg together using a fork then add to the processor. Continue to pulse until a ball appears. Immediately, as this dough will dry out rapidly, place the remaining flour on a cutting board, cut the pasta into four quarters and roll each quarter to about ½ inch of thickness. ( for those making this by hand, roll the dough as thin as you can ) Using a pasta rolling attachment, start at the thickest setting and process the dough, resetting the rollers until you reach the desired thickness. Cut the pasta to the desired type using the pasta cutting attachments or a very sharp knife. Heat salted water in a large pot and place the pasta in the water. The pasta will cook very quickly, in about 5 minutes. Remove and drain do not rinse.
  2. Not you can substitute 1.33 cups of flax gel for the eggs.
