Henry's Hollandaise Sauce

Ingredientes

  • 1/2 c. butter
  • 2 egg yolks, well beaten
  • 1/4 teaspoon salt
  • Dash of cayenne
  • 1 tbsp. lemon juice

Direcciones

  1. Heat butter in top of double boiler. Add in to egg yolks, gradually, stirring constantly. Return to double boiler and cook over warm water till thickened, stirring constantly. Remove from heat and stir in salt, cayenne and lemon juice. Sauce may be prepared 30 to 45 min before serving.
