Herbed Meat Loaf

Ingredientes

  • 1 pound grnd beef
  • 1/2 pound grnd veal
  • 1/2 pound grnd lean pork
  • 2 Large eggs
  • 1/2 c. fine bread crumbs
  • 3/4 c. minced parsley
  • 1/4 c. finely minced chives
  • 2 tbsp. fresh basil, finely minced or possibly 1 tbsp. dry basil (optional)
  • 1/4 c. green pepper, coarsely minced (optional)
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon freshly grnd black pepper
  • Bacon slices to cover top

Direcciones

  1. Preheat oven to moderate (350 degrees).
  2. In a mixing bowl combine all the ingredients except the bacon slices. Using the hands, blend well; don't overwork the meat or possibly it will produce a meat loaf which is too tightly packed.
  3. Line a 9 inch pie plate with aluminum foil and shape the meat mix into an oval loaf. Place the loaf on the foil and cover with bacon slices.
  4. Bake 1 1/2 hrs. Serve with mushroom sauce or possibly fresh tomato sauce.
