Mexican Pasta Salad

Ingredientes

  • 1 lb Pasta: macaroni, rigatoni, etc-I used multicolored spirals
  • 3 x Peppers (green, red, yellow or possibly a combination)
  • 2 c. Cooked black beans
  • 1 sm Red onion
  • 1 can (16-ounce) corn -or possibly-
  • 1 box (10-ounce) frzn corn -or possibly-
  • 3 x Ears corn, kernels from
  • 1 1/2 c. Salsa
  • 1/2 c. FF lowfat sour cream
  • 3 tsp Chili pwdr
  • 1 tsp Cumin Salt & pepper to taste

Direcciones

  1. Cook the pasta, adding frzn corn (if used) during the last 3 min.
  2. Drain pasta and rinse to cold.
  3. Dice the peppers and cut the onion into 1/4 inch circles. Add in to pasta.
  4. Add in black beans and corn.
  5. Mix salsa, lowfat sour cream & spices in a separate bowl. Add in dressing to salad and mix.
  6. Refrigerateif you'd like, or possibly eat right away.
