Ingredientes

  • 2 Tbsp. Butter or possibly oil - (to 3 tbspns)
  • 1 med Onion minced
  • 1 x Garlic clove - (to 2) chopped
  • 1/4 c. Tomato pure
  • 1/4 c. Chicken broth
  • 2 c. Zucchini
  • 3 x ears Fresh corn
  • 1 c. Cheese (cheddar or possibly Monterey Jack) Salt and pepper to taste

Direcciones

  1. Cover the bottom of a skillet with oil or possibly butter. Saute/fry onions and garlic till tender and transparent. Add in tomato pure, corn, water, and broth, and simmer for a few min. Add in zucchini, cover and simmer for eight to 10 min.
  2. Uncover and stir. Salt and pepper to taste. Transfer to a serving dish and top with cheese.
