Receta Mexican Zucchini

Ingredientes
- 2 Tbsp. Butter or possibly oil - (to 3 tbspns)
- 1 med Onion minced
- 1 x Garlic clove - (to 2) chopped
- 1/4 c. Tomato pure
- 1/4 c. Chicken broth
- 2 c. Zucchini
- 3 x ears Fresh corn
- 1 c. Cheese (cheddar or possibly Monterey Jack) Salt and pepper to taste
Direcciones
- Cover the bottom of a skillet with oil or possibly butter. Saute/fry onions and garlic till tender and transparent. Add in tomato pure, corn, water, and broth, and simmer for a few min. Add in zucchini, cover and simmer for eight to 10 min.
- Uncover and stir. Salt and pepper to taste. Transfer to a serving dish and top with cheese.
