Ingredientes
- 1/3 cup oil
- 2 onions, finely chopped
- 1 tablespoon freshly grated ginger
- 1-2 sticks cinnamon broken
- 2-3 pods cardamom
- 4-6 cloves
- 2 tablespoons crushed black pepper
- 1 lbs lamb, trimmed of fat and cut into cubes ( plus some lamb bones)
- 1 teaspoon turmeric
- 1.5 teaspoons salt
- 2-3 tomatoes, cut into small pieces
- 1 large potato, cut into small pieces
- 2 cups water
- 1/3 cup chopped cilantro
- 1 cup chopped cremini mushrooms
- a few dried red chillies

%20back,%20when%20I%20was%20still%20living%20in%20India,%20lamb%20was%20not%20seen%20on%20menus,%20this%20has%20changed.%3C/p%3E%3Cp%3EI%20see%20students%20and%20other%20give%20me%20a%20look%20of%20horror%20when%20I%20tell%20them%20about%20goat%20meat,%20but%20in%20reality%20goat%20meat%20is%20very%20tasty%20and%20a%20lot%20leaner%20than%20lamb.%20This%20being%20said%20it%20is%20not%20very%20easy%20to%20find%20in%20Westchester.%20My%20substitute%20is%20using%20American%20lamb,%20which%20I%20feel%20is%20a%20little%20closer%20in%20taste%20to%20goat%20meat.%20No%20one%20else%20in%20my%20household%20eats%20lamb.%20Nonetheless,%20for%20various%20reasons%20including%20freeing%20myself%20of%20the%20toxic%20situation%20at%20work,%20I%20felt%20that%20I%20owed%20myself%20a%20treat.%20So%20I%20cooked%20up%20a%20quick%20and%20satisfying%20lamb/mutton%20curry.%20It%20was%20spicy,%20somewhat%20robust,%20laced%20with%20mushrooms%20and%20potatoes.%20Just%20what%20you%20would%20want%20a%20wintery%20day%20like%20today.%20I%20have%20spent%20the%20entire%20weekend%20running%20around%20%E2%80%93%20dance%20class,%20grocery,%20you%20name%20it.%20I%20deserved%20something%20comforting%20just%20for%20myself.%3C/p%3E%3Cp%3EI%20made%20some%20rice-%20also%20nicely%20flavored%20with%20fennel,%20cumin,%20ginger%20and%20nicely%20filled%20with%20spinach%20leaves%20to%20add%20some%20nutrition%20to%20the%20meal.%20Well,%20here%20it%20is,%20my%20treat%20to%20myself.%20Ok,%20Ok,%20I%20made%20some%20other%20stuff%20to%20go%20with%20the%20rice%20so%20that%20others%20at%20home%20could%20eat%20as%20well,%20I%20shall%20tell%20you%20about%20it%20later.%3C/p%3E%3Cp%3EThere%20was%20one%20other%20highlight%20to%20weekend,%20we%20went%20over%20to%20Rajni%E2%80%99s%20(my%20household%20helper/kid%20shuttler)%20for%20a%20small%20gathering.%20They%20live%20as%20a%202%20family%20(2%20brothers%20and%20their%20own),%20her%20mother%20and%20father-in-law%20live%20with%20them%20too.%20I%20had%20always%20pictured%20their%20household%20as%20something%20chaotic,%20just%20because%20that%20is%20how%20our%20house%20is%20on%20a%20lot%20of%20days,%20with%20half%20the%20number%20of%20inhabitants.%20I%20was%20simply%20floored%20by%20the%20warmth,%20peace%20and%20homeyness%20that%20their%20house%20radiated.%20They%20were%20warm%20open,%20completely%20ready%20to%20share%20all%20that%20they%20had%20to%20offer.%3C/p%3E%3Cp%3EMutton%20(Lamb)%20Stew%20with%20potatoes%20and%20mushrooms%3C/p%3E%3Cp%3EPrep%20Time:%2015%20minutes%3C/p%3E%3Cp%3ECook%20Time:%2045%20minutes%3C/p%3E%3Cp%3EServes%204%20people%20(recipe%20can%20very%20easily%20be%20expanded)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod%20of%20Preparation%3C/p%3E%3Cp%3E1.%20Heat%20the%20oil%20and%20add%20the%20onions,%20ginger%20and%20saute%20for%204-5%20minutes.%20The%20onions%20should%20soften,%20wilt%20and%20begin%20turning%20lightly%20golden.%3C/p%3E%3Cp%3E2.%20Add%20in%20the%20cinnamon,%20cardamom,%20cloves,%20black%20pepper%20and%20lamb.%3C/p%3E%3Cp%3E3.%20Mix%20well%20and%20add%20in%20the%20salt%20and%20turmeric%20and%20cook%20stirring%20well%20for%20a%20good%2010-15%20minutes,%20until%20the%20lamb%20is%20well%20browned.%3C/p%3E%3Cp%3E4.%20Add%20in%20the%20tomatoes%20and%20potatoes%20and%20the%20water%20and%20bring%20to%20a%20simmer.%20Cook%20under%20pressure%20for%2015%20minutes%20or%20covered%20on%20low%20heat%20till%20the%20lamb%20is%20tender%20and%20the%20gravy%20is%20thick.%20(note,%20the%20time%20here%20is%20provided%20for%20cooking%20in%20a%20pressure%20cooker,%20if%20you%20are%20cooking%20without%20one%20it%20shall%20take%20longer).%3C/p%3E%3Cp%3E5.%20Cool%20slightly%20and%20remove%20the%20cover.%20Add%20in%20the%20cilantro,%20mushrooms%20and%20the%20red%20chillies%20and%20cook%20for%20another%203-5%20minutes%20and%20serve.%3C/p%3E%3Cp%3EGinger%20and%20Spinach%20Pulao%20-Fragrant%20Basmati%20rice%20cooked%20with%20ginger%20and%20spinach%3C/p%3E%3Cp%3EPrep%20Time:%205%20minutes%3C/p%3E%3Cp%3ECook%20Time:%2025%20minutes%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E1%20tablespoon%20ghee%3C/p%3E%3Cp%3E1%20tablespoon%20oil%3C/p%3E%3Cp%3E1%20small%20onion,%20finely%20chopped%3C/p%3E%3Cp%3E1%20teaspoon%20cumin%20seeds%3C/p%3E%3Cp%3E1%20teaspoon%20fennel%20seeds%3C/p%3E%3Cp%3E1%20teaspoon%20salt%3C/p%3E%3Cp%3E1%20cup%20basmati%20rice%20(soaked%20for%2030%20minutes%20and%20drained)%3C/p%3E%3Cp%3E1/2%20teaspoon%20turmeric%3C/p%3E%3Cp%3E1/2%20teaspoon%20red%20chili%20powder%20(optional)%3C/p%3E%3Cp%3E1.5%20cups%20water%3C/p%3E%3Cp%3E2%20cups%20finely%20chopped%20baby%20spinach%3C/p%3E%3Cp%3EMethod%20of%20Preparation%3C/p%3E%3Cp%3E1.%20Heat%20the%20ghee%20and%20oil%20in%20a%20pot.%3C/p%3E%3Cp%3E2.%20Add%20the%20onion,%20cumin%20and%20fennel%20seeds%20and%20cook%20till%20the%20seeds%20begin%20to%20sizzle%20and%20the%20onion%20is%20soft%20and%20transluscent,%20this%20should%20take%20about%202-3%20minutes.%3C/p%3E%3Cp%3E3.%20Stir%20in%20the%20salt,%20rice,%20turmeric%20and%20the%20red%20chili%20powder%20if%20you%20are%20using
