I made this cake about three months ago, (and photographed it with my broken old point-and-shoot camera)-- but never got around to blogging it. I have no idea why, but I can tell you that our dinner guest went back for seconds and was happy that I sent her home with an extra slice. (Now that I think about it, I didn't like the photos of the finished cake.) I've made this cake recipe several times, and it always turns out very moist and tender. I'm sure that the buttermilk and oil has a lot to do with it! Yes, there's coffee in the recipe, but you can't really taste it. --%20but%20never%20got%20around%20to%20blogging%20it.%20%20I%20have%20no%20idea%20why,%20but%20I%20can%20tell%20you%20that%20our%20dinner%20guest%20went%20back%20for%20seconds%20and%20was%20happy%20that%20I%20sent%20her%20home%20with%20an%20extra%20slice.%20%20(Now%20that%20I%20think%20about%20it,%20I%20didn't%20like%20the%20photos%20of%20the%20finished%20cake.)%20%20I've%20made%20this%20cake%20recipe%20several%20times,%20and%20it%20always%20turns%20out%20very%20moist%20and%20%20tender.%20%20I'm%20sure%20that%20the%20buttermilk%20and%20oil%20has%20a%20lot%20to%20do%20with%20it!%20Yes,%20there's%20coffee%20in%20the%20recipe,%20but%20you%20can't%20really%20taste%20it.%20%20If%20you've%20never%20added%20coffee%20to%20a%20chocolate%20cake%20recipe%20you%20will%20be%20surprised%20at%20how%20much%20richer%20the%20chocolate%20tastes.%20%20I%20didn't%20take%20a%20lot%20of%20detailed%20photos,%20because%20my%20guest%20was%20almost%20here%20and%20I%20was%20rushing%20through%20the%20whole%20process%20I%20would%20hope%20that%20most%20everyone%20knows%20how%20to%20bake%20a%20cake.%20Right?%20%20We%20start%20with%20flour%20and%20sugar%20and%20leavener,%20and%20Dutch%20Process%20Cocoa%20and%20a%20few%20extra%20goodies%20(the%20recipe%20card%20is%20at%20the%20bottom%20of%20this%20post).Add%20eggs,%20coffee,%20buttermilk,%20oil,%20&%20vanilla.%20Beat%20at%20medium%20speed%20for%202%20minutes.Now,%20we%20add%20the%20cooled%20coffee.%20%20The%20batter%20will%20be%20a%20bit%20thin,%20but%20no%20worries.%20%20I%20decided%20to%20bake%20the%20cakes%20in%20a%209%22%20baking%20pan,%20which%20I%20lined%20with%20parchment%20paper%20(my%20best%20friends).%20%20Baking%20time%20varies,%20of%20course.%20%2028%20minutes%20is%20the%20suggested%20time,%20but%20I%20always%20check%20my%20cake%204-5%20minutes%20beforehand.%20%20I%20don't%20like%20dry%20cake.%20%20Then%20again,%20who%20does?!Cool%20the%20cake%20--%20you%20know%20the%20drill.%20%20For%20the%20frosting,%20%20I%20decided%20to%20do%20something%20a%20little%20different.%20%20I%20want%20to%20fill%20the%20center%20with%20whipped%20cream.%20%20Only,%20I%20wanted%20to%20stabilize%20it.%20%20I%20did%20a%20little%20research%20and%20I%20read%20that%20powdered%20sugar%20helps.%20%20I%20also%20read%20that%20unflavored%20gelatin%20helps.%20%20Then,%20I%20saw%20a%20recipe%20that%20used%20both.%20%20Why%20not?1/4%20cup%20ice%20cold%20water,%201%20teaspoon%20unflavored%20gelatin,%201/4%20cup%20confectioners%20sugar,%201%20teaspoon%20pure%20vanilla%20extract%20and%201%20cup%20heavy%20cream.%20%20The%20cold%20water%20is%20added%20to%20the%20gelatin%20to%20%22bloom%22%20it.%20%20I%20ended%20up%20microwaving%20it%20for%20about%2010%20seconds,%20just%20to%20make%20it%20pourable%20into%20the%20whipped%20cream.%20Otherwise,%20I%20risk%20having%20lumps%20in%20my%20whipped%20cream.%3C/p%3E%3Cp%3ENOTE:%20I%20always%20chill%20my%20bowl%20and%20beaters%20before%20whipping%20my%20cream.%20It's%20foolproof.You%20can%20see%20that%20the%20whipped%20cream%20has%20the%20texture%20of%20frosting.%20%20So%20far,%20I've%20never%20made%20butter%20by%20over%20whipping%20my%20cream.%20Whew!%20Done.Our%20family%20loves%20a%20white%20frosting,%20to%20contract%20the%20chocolate%20flavor.%20%20I%20had%20an%20idea.%20%20%20I%20had%20made%20a%20Grand%20Marnier%20Sauce%20for%20a%20Fig%20Brulee%20and%20I%20had%20some%20left%20over.%20%20Hmmmm....I%20never%20measure%20when%20I%20make%20frostings.%20I%20just%20create%20it%20by%20texture.%20%20One%20stick%20of%20butter,%20and%20powdered%20sugar,%20and%20vanilla%20extract.%20%20I%20like%20to%20add%20a%20little%20half%20&%20half%20to%20make%20the%20frosting%20silky.%20%20So,%20I%20drizzled%204%20ounces%20of%20the%20caramel%20flan%20sauce%20into%20the%20frosting...%20%20When%20frosting%20my%20cakes,%20I%20like%20to%20build%20a%20wall%20around%20the%20bottom%20layer%20with%20a%20piping%20bag.%20Then%20I%20filled%20it%20in%20with%20the%20whipped%20cream%20frosting%20center...,%20using%20That%20way,%20when%20I%20add%20the%20frosting%20on%20top%20and%20the%20sides,%20the%20whipped%20cream%20won't%20leak%20out.%20%20%20On%20a%20whim,%20I%20drizzled%20the%20very%20last%20of%20the%20caramel%20sauce%20over%20the%20cake.%20%20The%20cake%20isn't%20photogenic,%20I%20thought%20to%20myself.%3C/p%3E%3Cp%3EBut,%20our%20dinner%20guest%20thought%20so.%20She%20patiently%20waited%20while%20I%20cut%20and%20photographed%20dessert.%3C/p%3E%3Cp%3EThis%20cake%20wouldn't%20win%20for%20good%20looks,%20compared%20to%20my%20Tuxedo%20Cake...%3C/p%3E%3Cp%3E...this%20has%20a%20white%20chocolate%20mousse%20filling.%20(Slurp.)%20But,%20I%20never%20got%20to%20taste%20it.%20I%20gave%20it%20away.%3C/p%3E%3Cp%3EBut,%20the%20inside%20looks%20good%20to%20me!%20Rich%20chocolate%20and%20a%20whipped%20cream%20filling...%3C/p%3E%3Cp%3EVERDICT:%20%20Moist.%20Tender.%20Chocolatey.%20%20The%20whipped%20cream%20balances%20out%20the%20sweetness%20of%20the%20buttercream.%20%20The%20caramel%20in%20the%20frosting%20is%20very%20subtle.%20%20Everyone%20has%20seconds!%20%20The%20cake%20was%20gone%20the%20next%20day.%20%20I%20speak%20the%20truth--%20this%20is%20an%20excellent%20scratch%20cake.%20Who%20needs%20cake%20mix?%20%20Really?%3C/p%3E%3Cp%3ESo,%20now%20I've%20written%20two%20posts%20about%20cakes,%20which%20is%20unusual%20for%20me.%20%20I%20have%20a%20wicked%20sweet%20tooth.%20%20Did%20I%20ever%20tell%20you%20that?%20%20That's%20why%20I%20don't%20bake%20cakes%20very%20often.%20%20I'd%20be%20a%20glutton.%20When%20nobody%20is%20looking.%20%20I'm%20posting%20the%20original%20recipe%20for%20the%20cake,%20and%20how%20I%20made%20the%20Caramel%20Sauce%20below%20my%20signature.%20%20This%20cake%20is%20the%20star%20of%20this%20dessert.%20%20You%20can%20use%20any%20kind%20of%20frosting%20that%20strikes%20your%20fancy--%20but,%20please...%20no%20canned%20frosting!%20%20Homemade%20buttercream%20is%20so%20easy%20to%20make,%20and%20doesn't%20have%20all%20those%20stabilizers%20and%20hard-to-pronounce%20ingredients%20in%20them!%3C/p%3E%3Cp%3ECheers!%3C/p%3E){kind=link}
