Ingredientes

  • 1/2 c. sweet butter
  • 1/4 c. straight sherry
  • 2 tsp minced shallots
  • 1/4 tsp paprika
  • 1 c. heavy cream
  • 4 x egg yolks

Direcciones

  1. In a double boiler, heat butter, add in sherry, shallots, and paprika, stirring constantly till shallots are tender.
  2. Add in cream and well-beaten egg yolks, stir quickly with wire whisk till sauce has thickened. Serve at once.
