Ingredientes

  • 1/4 c. extra virgin olive oil
  • 3 med. potatoes, peeled and sliced thin
  • 2 peppers, sliced
  • 1 med. onion, sliced
  • Salt and pepper, to taste
  • Healthy pinch basil
  • 2 to 3 teaspoon minced parsley
  • 6 Large eggs
  • 1/4 c. lowfat milk
  • 6 tbsp. Parmesan cheese

Direcciones

  1. Place oil in skillet over medium heat. Add in potatoes which have been peeled and sliced thin. Add in peppers and onion; cook till tender and potatoes are browned. Season with salt and pepper to taste. Add in basil and parsley.
  2. In a bowl, scramble Large eggs, lowfat milk and Parmesan cheese. Pour in skillet; blend with potato mix and cook over medium heat. Mix as Large eggs cook. Cover with tight lid till brown and completely cooked. Let cold a few min. Can be placed on a plate and sliced or possibly served from pan.
