Receta Potato And Pepper Frittata (From Grandma Rittendale)

Ingredientes
- 1/4 c. extra virgin olive oil
- 3 med. potatoes, peeled and sliced thin
- 2 peppers, sliced
- 1 med. onion, sliced
- Salt and pepper, to taste
- Healthy pinch basil
- 2 to 3 teaspoon minced parsley
- 6 Large eggs
- 1/4 c. lowfat milk
- 6 tbsp. Parmesan cheese
Direcciones
- Place oil in skillet over medium heat. Add in potatoes which have been peeled and sliced thin. Add in peppers and onion; cook till tender and potatoes are browned. Season with salt and pepper to taste. Add in basil and parsley.
- In a bowl, scramble Large eggs, lowfat milk and Parmesan cheese. Pour in skillet; blend with potato mix and cook over medium heat. Mix as Large eggs cook. Cover with tight lid till brown and completely cooked. Let cold a few min. Can be placed on a plate and sliced or possibly served from pan.
