Quinoa Salad with Broccoli and Chickpeas

Ingredientes

  • 2 tablespoons fresh lemon juice
  • 1 tablespoon parsley, chopped
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Quinoa, cooked
  • 3/4 cup canned Chickpeas, rinsed and drained
  • 1 medium tomato, seeded and chopped
  • 1 cup fresh broccoli, cut into pieces

Direcciones

  1. In a medium saucepan, cook Quinoa according to package directions.
  2. In a medium bowl, whisk together lemon juice, parsley, olive oil, salt and pepper.
  3. Add Quinoa, chickpeas, tomato, and broccoli.
  4. Toss to combine.
