Receta Roasted Butternut Squash Wontons with Coconut Spinach, Black Beans & Roasted Corn

Ingredientes
- 1/2 lg butternut squash, peeled and cubed into about 1 inch cubes
- Extra virgin olive oil
- About 1 Tablespoon garam masala
- 2 large leaves kale, chopped pretty fine
- 8-10 shitake mushrooms, chopped fairly fine
- salt and pepper
- About 20 wonton wrappers
- Vegetable oil for frying
- For the side:
- 1 small white onion (or 1/2 large) chopped
- 2-3 cloves garlic, chopped fine or smashed through a garlic crusher
- 4 small ears corn, roasted or boiled, then shucked
- salt and pepper
- about 3/4 cup coconut milk
- 1 can black beans, drained and rinsed
- about 3 cups baby spinach
- 2 green onions, chopped for garnish
- Sriracha sauce, for garnish

%3C/p%3E%3Cp%3EActually,%20despite%20the%20long%20title%20of%20this%20fantastic%20dish,%20it%20was%20super%20easy.%20Probably%20extra%20easy%20for%20me%20because%20the%20roasted%20butternut%20squash%20was%20from%20last%20weekend's%20Roasted%20Butternut%20Squash%20and%20Spicy%20Chickpeas%20and%20the%20corn%20was%20from%20one%20last%20week's%20Zucchini%20Corn%20Vegetable%20Fritters%20so%20they%20were%20pretty%20much%20prepped%20and%20ready.%20I%20love%20it%20when%20that%20happens...%20extra%20gets%20used%20for%20another%20amazing%20meal%20and%20doesn't%20go%20to%20waste;%20because%20I%20can't%20think%20of%20anything%20more%20annoying%20than%20vegetables%20going%20to%20waste.%3C/p%3E%3Cp%3EEven%20if%20your%20veg%20isn't%20prepped,%20don't%20fret;%20it%20really%20won't%20take%20long%20AND%20you%20can%20do%20it%20all%20ahead%20so%20it%20makes%20this%20meal%20a%20fantastic%20'make%20ahead'%20meal.%20You%20could%20also%20just%20do%20the%20wontons:%20make%20them%20ahead%20then%20serve%20them%20at%20a%20party...%20and%20y'all%20know%20how%20much%20I%20lurve%20a%20party.%3C/p%3E%3Cp%3EOk,%20so%20here%20we%20go:%20simple,%20flavorful,%20pretty%20to%20look%20at...%3C/p%3E%3Cp%3EYield:%20about%2020%20wontons%20and%3C/p%3E%3Cp%3Eabout%204%20healthy%20portions%20of%20the%20side%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3EFor%20the%20wontons:%3C/p%3E%3Cp%3EDo:%20If%20your%20butternut%20squash%20isn't%20already%20cooked%20and%20ready%20to%20go,%20pre-heat%20oven%20to%20375,%20spread%20chopped%20pieces%20onto%20a%20baking%20sheet,%20drizzle%20with%20extra%20virgin%20olive%20oil%20and%20sprinkle%20with%20garam%20masala%20spice%20mix.%20Roast%20for%20about%2045%20minutes%20to%20an%20hour...%20until%20soft%20and%20roasty.%3C/p%3E%3Cp%3EPrepare%20your%20corn%20right%20now%20too...%20if%20it's%20not%20already%20done.%20You%20can%20also%20get%20frozen%20roasted%20corn%20from%20Trader%20Joe's;%20it%20works%20in%20a%20pinch.%3C/p%3E%3Cp%3EIn%20a%20pot%20on%20the%20stove,%20heat%20some%20olive%20oil%20and%20saute%20the%20chopped%20onion%20and%20garlic%20until%20translucent%20then%20add%20the%20shucked%20corn.%20Stir%20to%20incorporate,%20add%20salt%20and%20pepper%20to%20taste%20then%20add%20coconut%20milk%20and%20let%20cook%20on%20med/low%20for%20about%205%20minutes.%3C/p%3E%3Cp%3EAfter%20about%205%20minutes,%20add%20your%20beans,%20stir%20and%20give%20it%20a%20taste.%20Add%20more%20salt%20and%20pepper%20if%20needed,%20then%20turn%20heat%20to%20low%20and%20let%20sit%20while%20you%20prepare%20your%20wontons.%3C/p%3E%3Cp%3EIn%20another%20pan,%20heat%20a%20bit%20more%20olive%20oil%20then%20saute%20the%20kale%20and%20mushrooms%20on%20med%20heat%20until%20soft,%20about%205%20to%207%20minutes.%20Turn%20heat%20off%20and%20add%20your%20butternut%20squash%20when%20it%20is%20done%20roasting.%3C/p%3E%3Cp%3EUsing%20a%20potato%20masher,%20give%20the%20mix%20a%20light%20mash%20to%20break%20up%20any%20large%20chunks%20of%20squash.%20Make%20sure%20to%20also%20stir%20to%20get%20everything%20evenly%20mixed.%3C/p%3E%3Cp%3ETo%20'stuff'%20your%20wontons,%20one%20wrapper%20at%20a%20time,%20take%20a%20small%20spoonful%20of%20the%20butternut%20squash%20mix%20and%20put%20it%20slightly%20in%20the%20middle%20of%20the%20wonton.%3C/p%3E%3Cp%3EUse%20a%20little%20bowl%20of%20water%20to%20wet%20your%20finger%20and%20then%20run%20it%20across%20two%20of%20the%20edges%20of%20the%20wonton.%20Fold%20the%20other%20side%20of%20the%20wonton%20on%20top%20of%20the%20mix%20and%20gently%20press,%20ensuring%20that%20all%20the%20air%20is%20out%20of%20the%20middle.%20Repeat%20until%20your%20mix%20is%20all%20gone.%3C/p%3E%3Cp%3EIn%20a%20pot%20or%20pan,%20heat%20about%201/2%20cup%20vegetable%20oil%20on%20fairly%20high%20heat.%20To%20test%20and%20make%20sure%20the%20oil%20is%20ready,%20dip%20one%20corner%20of%20a%20wonton%20into%20the%20oil;%20if%20it%20starts%20to%20bubble%20you%20know%20it's%20time%20to%20put%20them%20in.%3C/p%3E%3Cp%3EPan%20fry%20about%204%20to%206%20at%20a%20time,%20depending%20on%20your%20pan%20size.%20Cook%20until%20golden%20brown%20and%20crispy.%20Note:%20they%20do%20not%20take%20very%20long%20to%20cook;%20literally%20about%2030%20seconds%20on%20each%20side%20so%20don't%20let%20them%20sit%20there%20forever...%20make%20sure%20you%20check%20them.%3C/p%3E%3Cp%3EWhen%20your%20first%20batch%20is%20done,%20transfer%20them%20to%20a%20paper%20towel%20to%20soak%20up%20the%20extra%20oil.%20Repeat%20for%20all%20wontons.%3C/p%3E%3Cp%3EBack%20to%20your%20side%20that%20is%20still%20on%20the%20stove:%20Turn%20off%20the%20heat%20and%20add%20your%20spinach%20at%20this%20point;%20stir%20to%20incorporate%20and%20then%20cover%20so%20the%20spinach%20will%20wilt.%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3EOn%20a%20plate,%20start%20with%20your%20coconut%20spinach%20black%20bean%20corn%20side.%20Line%20it%20artfully%20on%20one%20side%20of%20the%20plate.%20Next%20to%20it,%20stack%20several%20wontons...%20as%20you%20see%20from%20the%20pictures,%20I%20did%20four%20for%20Honey.%3C/p%3E%3Cp%3ESprinkle%20a
