Ingredientes

  • 1 x 6 ounce salmon fillet
  • 3 fl ounce Noilly Pratt
  • 6 fl ounce double cream
  • 6 x Basil leaves
  • 1/2 ounce Sundried tomatoes
  • 1 x Squeeze lemon juice
  •     Salt and pepper

Direcciones

  1. First prepare the sauce. Put Noilly Pratt into a saucepan and reduce by half. Leave to cold. Put cream into another saucepan and boil to reduce till thick and golden brown. Chop basil leaves and sundried tomatoes and add in to the cream with the reduced Noilly Pratt. Sharpen to taste with lemon and season with salt and pepper.
  2. Place salmon on a baking sheet with a good sized knob of butter but no seasoning. Place in oven at 200C for 5 min only. Take out and dish up with sauce at the side.
