SAVOURY RICE WITH GOLDEN CHEESE BALLS

This recipe makes for a good Weekend Dinner.Looks and seems a little fancy and very appetizing,it is both satisfying and delicious.

Ingredientes

  • FOR SAVOURY RICE:
  • 2 cups cooked rice
  • 1/2 small onion
  • 2 cloves of garlic
  • 2 courgettes
  • 1 carrot
  • 2 eggs
  • 2 cups grated cheese(a combo of cheddar and mozzarella is good)
  • 1/2 tsp ground nutmeg
  • salt and pepper to taste
  • 1 tsp fresh or dried rosemary
  • GOLDEN CHEESE BALLS:
  • 1/2 cup Mozzarella cheese
  • 1-2 cup cottage cheese
  • 1/2 cup bread crumbs
  • 1/2 onion, finely chopped
  • 2 green chillies, finely chopped
  • Salt and pepper to taste
  • Mix all ingredients and form it into a dough.
  • Pinch out small balls.
  • Deep fry to a golden.

Direcciones

  1. FOR SAVOURY RICE:
  2. Melt butter in a pan.
  3. Finely chop onion and garlic,add to the butter and cook on high for 1-2 mins.
  4. Trim courgettes and carrot and grate them both'
  5. Beat eggs lightly.
  6. Mix rice,eggs,grated vegges,butter,onion,garlic, 1 cup cheese,nutmeg,rosemary ,salt and pepper.
  7. Transfer into a lightly greased baking pan and smooth top.
  8. Keep aside covered.
  9. FOR GOLDEN CHEESE BALLS:
  10. Mix all ingredients mentioned under ''Golden Cheese Balls'' and form it into a dough.
  11. Pinch out small balls.
  12. Deep fry to a golden brown colour.Drain on a kitchen towel.
  13. Now,arrange the cheese balls all around the border of the baking pan and sprinkle cheese all over rice and press down a little.
  14. Bake in a preheated oven at 200 C for 15-20 mins or till cheese starts to bubble on top turning golden color.
