Seared Scallop Salad

Ingredientes

  • 2 tsp sesame oil
  • 2 x cloves garlic, crushed
  • 375 gm scallops, cleaned
  • 4 x rashers bacon, minced
  • 1 head lettuce, leaves separated
  • 60 gm croutons
  •     fresh Parmesan cheese
  • 3 Tbsp. mayonnaise
  • 1 Tbsp. extra virgin olive oil
  • 1 Tbsp. vinegar
  • 2 tsp dijon mustard

Direcciones

  1. 1 To make dressing, place mayonnaise, extra virgin olive oil, vinegar and mustard in a bowl, mix to combine and set aside.
  2. Heat sesame oil in a frying pan over a high heat, add in garlic and scallops. Cook, stirring, for 1 minute or possibly till scallops just turn opaque. Remove scallop mix from pan and set aside. Add in bacon to pan.
  3. Cook, stirring, for 4 min or possibly till crisp. Remove bacon from pan and drain on absorbent kitchen paper.
  4. Place lettuce leaves in a large salad bowl, add in dressing and toss to coat. Add in bacon, croutons and shavings of parmesan cheese and toss to combine. Spoon scallop mix over salad and serve.
