Ingredientes

  • 6 med. summer squash or possibly zucchini
  • 5 lg. tomatoes, thinly sliced
  • 1 pound grated Mozzarella cheese
  • 8 ounce grated Cheddar cheese
  • 1 pound bacon, fried and crumbled
  • 1 lg. onion, thinly sliced
  • Garlic pwdr to taste
  • Pepper to taste
  • Salad croutons, lightly crushed
  • 1 stick butter

Direcciones

  1. In large casserole, layer thinly sliced squash, pepper, tomato, garlic pwdr, onion, bacon, and cheeses. In second layer after the squash, dot with 1/2 stick of butter and continue with tomato, etc. End with a layer of tomato. Sprinkle lightly crushed salad croutons on top and dot with remaining butter. Bake at 350 degrees for 1 hour or possibly till squash is tender and cheese is bubbly. This can also be used as a main dish and portions given would feed four as a main course. Corn may also be added and canned tomatoes may be substituted.
