Ingredientes

  • Non-Stick cooking spray
  • 3/4 lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 tsp ground cumin, (adjust as desired)
  • 1 green bell pepper, chopped
  • 1-1/2 cups thick & chunky salsa
  • 2 oz (1/4 of 8-oz pkg.) Neufchatel cheese, cubed
  • 1 can (15 oz) no-salt-added black beans, rinsed
  • 1 tomato, chopped
  • 2 whole wheat tortillas (6 inch)
  • 1/2 cup finely shredded (Mexican 2% four cheese blend), divided

Direcciones

  1. Preheat oven to 375º F.
  2. Cook and stir chicken and cumin into a nonstick skillet sprayed with cooking spray over medium heat 2 minutes. Add in the bell peppers; cook 2 minutes, stirring occasionally. Stir in the salsa; cook 2 minutes. Add in Neufchatel; cook 2 minutes or until melted. Stir in the beans and tomatoes.
  3. Spread 1/3 of the chicken mixture onto the bottom of an 8" square baking dish; cover with 1 tortilla and half each of the remaining chicken mixture and shredded cheese. Top with remaining tortilla and chicken mixture.
  4. Spread 1/3 of the chicken mixture onto the bottom of an 8" square baking dish; cover with 1 tortilla and half each of the remaining chicken mixture and shredded cheese. Top with remaining tortilla and chicken mixture.
