Receta The Derby: Soulful Southern-Inspired Cuisine Takes Over The Lower East Side

I had fallen in love with The Derby in its previous incarnation--the Tiny Fork--which was a seafood-driven establishment where customers feasted on large raw-bar trays. The ownership is the same, but there is an all-new staff. The Derby has only been open 2 1/2 months at the time of this writing, and friendly manager Gabe Voytas is as helpful as they come. He can answer your questions about every fussy detail of every dish. This is his first foray into the restaurant world; he previously managed several hot nightspots in the city.

,%20which%20consisted%20of%20romaine,%20palm%20hearts,%20strawberries,%20pancetta%20and%20herbs%20lightly%20coated%20with%20shallot-thyme%20vinaigrette.%20It's%20a%20super-refreshing%20salad%20perfect%20for%20a%20warm%20summer%20day.%20The%20salad%20had%20a%20bit%20of%20an%20anise%20taste,%20so%20I%20think%20on%20the%20particular%20night%20I%20dined%20there%20some%20chopped%20fennel%20was%20added%20to%20the%20salad.%20The%20portion%20is%20easily%20big%20enough%20for%20two--I%20would%20say%20that%20it%20measures%20three%20cups.%20The%20herbs%20and%20lettuce%20that%20the%20eatery%20uses%20is%20sourced%20locally%20and%20are%20tender%20and%20flavorful.%20Next%20we%20shared%20the%20BBQ%20Brisket%20Tacos%20($12)--the%20dry-rubbed%20brisket%20is%20cut%20into%20cubes%20and%20is%20perfectly%20marbled%20and%20juicy.%20The%20three%20medium%20sized%20soft%20white%20flour%20tacos%20are%20topped%20with%20pickled%20red%20onions%20and%20Nappa%20cabbage.%20The%20homemade%20horseradish%20cream%20is%20ultra-fresh%20and%20tangy%20and%20comes%20on%20the%20side%20in%20a%20metal%20cup.%20That%20horseradish%20cream%20made%20my%20night%20and%20must%20have%20been%20made%20as%20the%20meat%20was%20cooking.%20The%20red%20pickled%20onions%20were%20tangy%20and%20sweet%20at%20the%20same%20time%20and%20were%20the%20perfect%20compliment%20to%20the%20tender,%20peppery%20beef.%3C/p%3E%3Cp%3EChicken%20and%20Waffles%3C/p%3E%3Cp%3ENext%20we%20shared%20the%20Chicken%20And%20Waffles%20($18)%E2%80%94let%20me%20say%20here%20that%20the%20fried%20chicken%20is%20the%20dish%20that%20put%20The%20Derby%20on%20the%20map%20in%20the%20short%20time%20it%20has%20existed.%20(People%20line%20up%20around%20the%20block%20for%20their%20fried%20chicken,%20with%20or%20without%20waffles!)%20The%20waffles%20are%20very%20rich%20but%20fluffy%20and%20interestingly%20enough,%20the%20golden%20battered%20chicken%20has%20the%20skin%20removed.%20The%20chicken%20is%20cooked%20perfectly%20crispy%20and%20I%20would%20highly%20recommend%20it.%20It%20definitely%20lives%20up%20to%20the%20hype.%20All%20foul%20used%20at%20The%20Derby%20is%20organically%20raised%20and%20juice%20dribbles%20out%20of%20it%20when%20you%20pierce%20it%20with%20your%20fork.%20The%20Chicken%20And%20Waffles%20is%20part%20of%20the%20three%20dish%20%22Breakfast%20All%20Day%22%20program%20that%20The%20Derby%20offers--the%20other%20choices%20are%20Shrimp%20'N%20Grits%20($13)%20which%20includes%20stone%20ground%20grits,%20maple%20cheddar%20organic%20fried%20eggs%20and%20Andouille%20sausage,%20and%20The%20Country%20Breakfast%20($17)%20which%20includes%20eggs,%20sausage,%20stoneground%20grits,%20a%20buttermilk%20biscuit%20and%20red%20eye%20gravy.%3C/p%3E%3Cp%3ECast%20Iron%20Rib%20Eye%20Steak%3C/p%3E%3Cp%3ENext,%20we%20shared%20the%20Cast%20Iron%20Rib%20Eye%20Steak%20($32)%20done%20medium%20and%20it%20was%20a%20beautiful%20piece%20of%20meat%20that%20was%20grass%20fed.%20It%20is%20the%20best%20ribeye%20I%20have%20had%20in%20the%20past%20year.%20It%20was%20so%20tender%20and%20did%20not%20have%20too%20much%20fat,%20and%20came%20with%20a%20delicious%20roasted%20garlic%20bulb%20and%20pieces%20of%20fresh%20lemon%20and%20thyme.%20The%20portion%20was%20large--I%20would%20say%20about%2012%20ounces--so%20two%20people%20can%20share%20it%20for%20dinner%20if%20they%20also%20order%20an%20appetizer%20or%20salad%20to%20share.%20More%20specifically,%20I%20would%20definitely%20say%20that%20two%20people%20could%20definitely%20be%20full%20sharing%20the%20Carolina%20Chopped%20Salad%20and%20the%20Rib%20Eye.%20I%20ordered%20the%20Market%20Vegetable%20Of%20The%20Day%20($6)-%20which%20happened%20with%20be%20Swiss%20Chard%20lightly%20saut%C3%A9ed%20with%20leeks%20and%20red%20onions%20in%20a%20combo%20of%20olive%20oil%20and%20lemon.%20It%20was%20a%20very%20large%20and%20delicious%20portion.%20I%20could%20tell%20that%20the%20chard%20and%20accompanying%20leeks/red%20onions%20had%20been%20locally%20grown,%20as%20they%20were%20full%20of%20flavor.%20This%20was%20a%20delightful%20healthy%20green%20side%20dish%20for%20a%20summer%20evening%20and%20the%20strong%20lemony%20taste%20was%20a%20perfect%20accompaniment%20to%20the%20meat%20I%20ordered.%3C/p%3E%3Cp%3EThe%20atmosphere%20in%20The%20Derby%20is%20casual,%20airy%20and%20comfortable.%20The%20walls,%20ceilings%20and%20floors%20have%20all%20been%20renovated%20but%20have%20been%20given%20an%20intentionally%20%22lived%20in%22%20look.%20All%20the%20chairs%20are%20bright%20yellow%20metal,%20which%20spruces%20up%20an%20otherwise%20neutral%20looking%20space.%20The%20bar%20area%20has%20plenty%20of%20tables%20so%20you%20can%20drink%20at%20a%20table%20or%20the%20super-long%20bar.%20There%20are%20a%20lot%20of%20glass%20doors%20on%20the%20front%20and%20side%20of%20the%20restaurant%20that%20are%20fully%20opened%20when%20the%20weather%20is%20nice,%20and%20diners%20have%20the%20choice%20of%20al%20fresco%20if%20they%20wish.%20The%20Derby%20is%20the%20kind%20of%20place%20with%20a%20neighborhood%20feel%20and%20can%20please%20many%20different%20palates.%20It's%20farm%20to%20table%20Southern%20food%20with%20a%20nouveau%20twist.%20They're%20always%20changing%20the%20menu%20while%20keeping%20the%20staples%20like%20the%20fried%20chicken%20and%20the%20Breakfast%20All%20Day%20items,%20so%20be%20sure%20to%20check%20them%20out%20often.%20It%20will%20be%20a%20place%20you%20will%20want%20to%20bring%20out%20of%20town%20guests%20because%20you%20just%20know%20they'll%20find%20something%20they%20love%20whether%20they%20are%20vegans%20or%20hardcore%20carnivores.%20And%20The%20Derby%20is%20a%20must%20for%20those%20who%20like%20down-home%20Southern%20cooking%20%22done%20right%22!%20(Aunt%20Bea%20would%20be%20proud!)%3C/p%3E%3Cp%3EI%20will%20be%20returning%20to%20The%20Derby--I%20must%20try%20their%20much-praised%20Braised%20Pork%20Belly%20($12)%20and%20Pulled%20Pork%20Sliders%20($11).%20These%20folks%20know%20eveyr%20angle%20for%20serving%20The%20Pig%20deliciously!%20I%20was%20too%20full%20to%20try%20dessert%20during%20my%20first%20visit%20to%20The%20Derby,%20so%20I%20will%20be%20checking%20their%20sweets%20out%20the%20next%20time%20I%20visit.%20The%20Derby%20also%20prides%20themselves%20in%20bourbon-based%20Southern%20style%20drinks,%20which%20I%20will%20be%20trying%20in%20the%20near%20future%20as%20well.%3C/p%3E%3Cp%3EThe%20Derby%3C/p%3E%3Cp%3E167%20Orchard%20Street%3C/p%3E%3Cp%3ENew%20York,%20NY%2010002%3C/p%3E%3Cp%3E(212)%20777-8469%3C/p%3E%3Cp%3Ewww.thederbynyc.com%3C/p%3E%3Cp%3ECuisine:%20American%3C/p%3E){kind=link}
