GROUP GOALS - PLEASE READ

I'd like this group to stay as close as possible to the real deal - true New Orleans Creole cooking. Creole peoples are found all over the world, not just in Louisiana. If you have a Creole recipe from the Maldives or Haiti or anywhere else, please share it here, but set down where the recipe comes from. That way we can better appreciate the evolution of the New Orleans Creole kitchen.

Most of what I post will be original New Orleans Creole recipes, with appropriate attribution to the original chef. I will spin off, as I do from time to time, with modifications, but you will know it because I'll tell you [I do this or that]. I would ask that you do the same. Let's create a compendium of tasty New Orleans Creole cooking and come to better appreciate and understand this very tasty and distinctly American cuisine. As my inspirational kitchen mentor, Chef Austin would say, "Do your best and let God do the rest"

Count me in, Chef Amos. I don't think I'll be posting many recipes onto this group, but I will be happily gathering them, cooking them and enjoying them. As an East Coast, American Italian, I don't have many Creole recipes in my recipe files. I'm so looking forward to seeing the ones posted. So let the "Mardi Gras" begin! N
